Our confection『Awajigata』is a fragrant Joyo bun with dainty plover motifs that reminds one of the tranquil seaside scape of Awaji island. Joyo bun contains grated yam (Tsukune-imo) which gives the sweet a distinctive aroma and texture. The cross hatch pattern, resembling gabions used to protect the shoreline of the island in the past, is delicately applied using a special tool. 『Awajigata』is available until 15 November at our Akasaka Store, TORAYA GINZA, Kyoto Ichijo Store, and other Toraya stores selling fresh Japanese sweets in the Kanto and Kyoto areas. Chestnuts or ‘kuri’ in Japanese are often given as an offering to the gods on this day. Our sweet of the same name combines sweet chestnuts crushed through a fine strainer with white azuki bean paste for a luxuriously smooth texture. Combinations were largely based on seasonal motifs and this pairing of pink and yellow captures the vibrant hues of a mountain’s autumn foliage. Using thin chopsticks, the artisan applies fine bean paste threads onto the base sphere carefully not to crush them. It features a rabbit looking adoringly at the moon as it rises above the tall grass. People in ancient times considered moons on the fifteenth night of the eighth month and the thirteenth night of the ninth month according to the lunar calendar particularly beautiful. This year, these dates fall on October 6 and November 2 respectively. Sweet bean paste is infused with richly-brewed fragrant olive blossom tea. It is then colored cream, yellow, and orange, and formed into a cluster of strands to resemble the flower in full bloom. The filling is a delicate mix of white bean paste and the tea’s flower petals. The sweet’s enveloping floral scent is a delight to the senses. Crispy on the outside, soft on the inside kanten jelly sticks are served together for a textural contrast. At Toraya, we only use the freshest new chestnuts. As chestnuts lose their freshness very easily after harvest, they are processed in the area immediately in order to retain their natural flavors. In the same way, the sales period of our chestnut sweets is also carefully calibrated with the producers to bring you this essential autumn flavor at its best. This year, among our four fresh chestnut confections, 『Kurikomochi』 and 『Choyo』 will be the first to be available at select stores, starting September 7.
