I thought, "Since the Wanabe has a round bottom, maybe I can use it like a wok?" That’s how I came up with this recipe for fluffy fried rice in a Staub pan🍳. Try timing yourself and make it in 3 minutes!😋 Here is the English translation of the transcription: — **Staub 3-Minute Fried Rice with Green Onions and Shirasu** With Staub, the temperature doesn't drop much even after adding ingredients, so you can achieve fluffy fried rice similar to what you get with a wok. The great thing about chicken tenders is that you don’t even need to cut them, just put them right in! 👏 Do you remove the tendon from the tenders? If you want to, go ahead and remove it. Haha! Imagine having a light snack with a drink 🍺 while it’s still bright outside... And how about some pasta, too? You can whip it up in no time. I’d love to make dinners like this every day. 😊 Bringing happiness into everyday life, together with my trusty Staub. ☺️ **Chicken Tender and Cabbage with Ponzu** Chicken tenders... 6 pieces → Remove the tendon, sprinkle with 1/2 tsp of salt Cabbage... 1/4 head (300g) → Slice into 1cm-wide strips Kaiware radish... 1 pack (30g) Sake... 2 tbsp Ponzu sauce... 2 tbsp **Instructions** 1. Spread the cabbage in a pot, place the chicken tenders on top, and sprinkle with sake. Cover with a lid and cook on medium heat. 2. Once steam starts escaping from the lid, lower the heat and steam for 3 minutes. Turn off the heat and leave the lid on. 3. Shred the chicken tenders, mix with the kaiware radish and ponzu sauce. I started my cooking classes in 2011, based in Ebisu and Atsugi. From the start, my classes centered around Staub cookware. Back then, I focused on stylish café-style dishes for entertaining guests. As my work as a food coordinator got busier, I took a break from the classes. But in 2014, I opened a café and restarted the classes, introducing more home-style meals for the general public. Each month, 70 participants (10 people × 7 classes) joined us. Then COVID-19 hit. In 2020, we couldn’t hold classes or even open the café. I was determined not to let the café close 🥹, so I started selling bento boxes by myself (and later asked Chika-san for help 😅). Luckily, I had started making videos just before the pandemic, which led me to take the cooking classes online! Although I was hesitant, with help from our members, we made it work. I thought we’d get 30 participants, but over 100 people signed up! Zoom felt intimidating for some, so I switched to Instagram, offering the classes at half price. Now, with over 500 members, we’re still doing online classes even after COVID. The great thing about online classes? You can watch in your pajamas, no makeup necessary, and rewatch the lessons anytime. We focus on seasonal ingredients in each class. At 2,980 yen, the classes are affordable, meant to offer a little inspiration or a break from your busy day. This year marks 5 years of our online classes. Time flies! 【ストウブ好き集まれ！ストウブ料理教室　はるひごはんオンライン】 @haruhigohanonline2 こんにちは😃はるひごはん大橋由香です。わたしがお料理教室をスタートしたのは2011年。恵比寿と厚木の2拠点で始めました。当初からストウブを使ったお料理教室だったのですがどちらかというとおもてなし料理を伝えていて、ちょっとオシャレなカフェごはんという感じでした。だんだんフードコーディネーターとしての仕事が忙しくなってきて、一度お料理教室はお休みしていたのですが 2014年カフェをオープンしたのでお店でお料理教室を再開。ここでは一般の方に寄り添った、おうちごはんを紹介し始めました。毎月10名×7回の70名様の枠が満席になり、新店舗に移転した頃コロナがやってきます。毎月のお料理教室ができなくなり、店内を開けることすらできなくなった2020年。でも、絶対に店を潰さない！とどっかのSNSに書いてました🥹 最初はワンオペのお弁当販売だけで営業し（沢山の方に応援してもらい、すぐに千佳さんにヘルプを頼んだ😅）ちょうどコロナが来る前に2020年は動画だ！と嘘のようなタイミングで動画をスタートしていた私は料理教室をオンラインにしよう！と思い付きます。これは前からオンラインでもやってみたいと思っていたけど、なかなか踏み出せなかった。やり方もわからないし、やってる人もいない。そんな中、会員さんたちに助けてもらいながら進めて行くことができました。最初は30人くらい集まれば良いかな、、とスタートしたのですが蓋を開けたら100名以上のお申し込みが。 zoomでの配信は、もしかしたらハードルが高い人もいるかな？！と Instagramを使って、お値段も半額に。今は500名以上の会員さんがいてくれてコロナが終わった今もオンライン配信しています。オンラインのメリットはおうちからパジャマでもスッピンでも観られるところ。繰り返し、いつでも録画を観られ季節の食材を使ってお料理教室をしています。 2980円という安価な設定にしたのも、お小遣いでも観られる金額にして忙しい日々のちょっとしたヒントに、息抜きになれば嬉しいなぁという気持ちです。千佳さんと2人で猛スピードでスタートしたオンライン料理教室は2024年が終わると丸5年。早いなぁ色々あったなぁでも本当にタイミング良く始められて沢山の方に観ていただき、ありがたいです。卒業された方もまたいつでも気軽に戻ってきていただきたいと思っています。初めての方も、お気軽に1ヶ月からお申し込みください☺️ 皆さんの食卓に幸せな笑顔が増えるよう、わたしはレシピを作っています。 @haruhigohanonline2 #はるひごはん　#大橋由香　#ストウブ　#staub #ストウブ料理　#ストウブレシピ　#はるひごはんオンライン　#ストウブ鍋　#料理レシピ　#料理　#レシピ Hello 😃 This is Yuka Ohashi from Haruhi Gohan. おはようございます♪はるひごはんの大橋由香です。新・ストウブ無水調理とは　弱火スタートで始めることで焦げづらく、じんわり火が入ることで食材がしっとり柔らかくメリットだらけの調理法です。「ストウブでずぼらスープ」からちょこちょここの調理法を使っておりまして次の10月発売の新刊ではほとんどの料理をこの弱火スタートで作っています。今回はストウブでずぼらスープから「チキンと焼きキャベツのスープ」をしっかり無水調理してからお水を入れる、という工程でお野菜もとーっても美味しくなります。ほったらかしなのにキャベツに美味しそうな焼き目が付くのもポイント。フライパンで焼いてから、、などの面倒な工程を省き、お鍋一つで完結するのが良い♪ パルミジャーノをすりおろし、黒こしょうをかけて召し上がれ〜あればパセリのみじん切りをのせるとまるでコンソメスープ。旨みをギュッと閉じ込めてコンソメの素が要らなくなるお鍋なのです。チキンと焼きキャベツのスープ** - 鶏もも肉 1枚 — 4等分に切り、塩小さじ1/2（分量外）をふる - キャベツ 1/4個 — 縦半分に切る - 塩小さじ1/2 - 水 500mL - オリーブ油小さじ1 - パセリ 2枝（好みで） — 葉をみじん切りにする - パルミジャーノ・レッジャーノ — 10g・すりおろす - 黒こしょう少々 1. 鍋にオリーブ油、キャベツ、鶏肉を順に入れ、ふたをして弱火で煮込む（20分）。途中、隙間から蒸気が出たら極弱火にする。 2. 塩、水を加えてひと混ぜし、中火にする。 3. 沸騰したら弱火にし、さらに煮込む（5分）。 4. 器に盛り、パセリ、パルミジャーノ、黒こしょうをちらす。 #はるひごはん　#大橋由香　#ストウブ　#staub #ストウブ料理　#ストウブレシピ　#はるひごはんオンライン　#ストウブ鍋　#料理レシピ　#料理　#レシピ Good morning! The new Staub waterless cooking method involves starting on low heat, which prevents burning and allows the ingredients to cook slowly and gently, making them moist and tender. It's a cooking method full of benefits. Today, I'm sharing a recipe from "Lazy Soup with Staub" called "Chicken and Grilled Cabbage Soup." The process of thoroughly waterless cooking before adding water makes the vegetables incredibly delicious. Even though it's hands-off, the cabbage develops a beautiful sear, which is a key point. - 1 chicken thigh — Cut into 4 pieces, sprinkle with 1/2 teaspoon salt (additional) - 1/4 cabbage — Cut in half lengthwise - 1/2 teaspoon salt - 500 mL water - 1 teaspoon olive oil - 2 sprigs of parsley (optional) — Finely chop the leaves - 10 g Parmigiano-Reggiano — Grated - A pinch of black pepper 1. In a pot, add olive oil, cabbage, and chicken in that order. Cover and simmer on **low heat** for 20 minutes. If steam escapes through a gap, reduce to **very low heat**. 2. Add salt and water, stir, and turn the heat to **medium**. 3. Once it comes to a boil, reduce to **low heat** and simmer for an additional 5 minutes. 4. Serve in a dish and sprinkle with parsley, Parmigiano, and black pepper.

【ストウブ鍋・お米の炊き方】こんにちは😃はるひごはんの大橋由香です。秋！新米の季節ですね〜ストウブのゴハンココットで美味しいごはん炊きませんか？ S.M.Lとサイズがあります。実はLサイズで炊くのは初めてでした。口径は20cmですがかなり深いので3-5合まで炊けるとのこと今回は４合炊いてみました。 S子ちゃんは蓋をするまで5分くらい Mは7分くらい Lは10分ほど Sは沸騰してひと混ぜし、極弱火にしてぶくぶくの沸騰が少しおさまってから蓋をするのがコツ。（S子ちゃんはIHだと反応しないこともあるので注意⚠️）お水は適当な量の水に浸けておいて、そのあとまた一度捨てて1合につき180mlのお水を入れてください。食べ比べたら、たくさん炊いたLのごはんがふっくら美味しい気がしました〜炊飯器で炊くと最近の炊飯器は小1時間かかったりしますよね😅 ストウブで炊くと何しろ早いのが良い♡ もちろんラウンドココットでも炊けますが深さがあって昔の羽釜炊きのようにふっくら炊けるのがゴハンココットの良い所。そしてご飯炊き以外でも揚げ物や汁物に活躍します。 #はるひごはん　#大橋由香　#ストウブ　#staub #ストウブ料理　#ストウブレシピ　#はるひごはんオンライン　#ストウブ鍋　#料理レシピ　#料理　#レシピ【How to Cook Rice in a Staub Pot】 Hello! This is Yuka Ohashi from Haruhi Gohan. It’s fall, the season of freshly harvested rice! Why not cook some delicious rice using the Staub Gohan Cocotte? The Gohan Cocotte comes in S, M, and L sizes. Actually, this was my first time cooking with the L size. Although it has a diameter of 20cm, it’s quite deep, allowing you to cook 3 to 5 cups of rice. This time, I cooked 4 cups of rice. For the S size, it takes about 5 minutes to bring it to a boil. For the M size, about 7 minutes. For the L size, about 10 minutes. (S size sometimes doesn't respond well to IH stoves, so be cautious⚠️) Soak the rice in a suitable amount of water, then drain it once. After that, add 180ml of water for each cup of rice. When I did a taste comparison, the rice cooked in the L size, which holds more rice, seemed fluffier and more delicious! With a rice cooker, it can take nearly an hour to cook rice these days, right? 😅 One of the great things about cooking rice in a Staub pot is how fast it is!♡ Of course, you can also cook rice in a regular round cocotte, but the Gohan Cocotte is deeper, allowing you to cook fluffy rice, just like the traditional kamado (Japanese rice cauldron). And it’s not just for cooking rice—you can also use it for frying or making soups.

Yesterday was our monthly snack bar day! I made a lot of dishes, like at an obanzai (homestyle Japanese) restaurant, so people could pick and eat whatever they liked ☺️ Some people come every month, and everyone gets along well, which is one of the great things about the snack bar 😊 (There’s no karaoke though, haha) This time, I added some rum, which I’m really into, and we all had a great time drinking together. The next one will be on Wednesday, October 16! Feel free to come even if you're by yourself~ Now, today’s dish is a BBQ-flavored one that both adults and kids love. It’s nice because it can be made with ingredients you probably already have in your fridge. Put olive oil, onion, green peppers, and pork into a pot and heat over medium heat for 5 minutes. 2. Add garlic, ginger, and ingredients from B, stir briefly, cover with a lid, and simmer on very low heat for 5 minutes. Turn off the heat, stir once, cover again, and let it sit with residual heat for 5 minutes.

Lately, I've been doing yoga right after I wake up, then having breakfast, and living a very human-like life. I've been having so much fun lately 😀 When people come over, I start thinking about what they might want to eat or drink, and I end up making little snacks and enjoying drinks 🍺. But when I'm alone, I have absolutely no motivation to cook—why is that? That being said, I used to cook hearty meals every day for my sons, who would eat a lot. The recipe I'm sharing today is one that will leave you fully satisfied even with inexpensive ingredients 🍚. The secret is to use the layering technique to ensure the meat cooks through perfectly! **Ginger Chicken** - Chicken breast... 2 pieces (1 piece 300g), cut diagonally, seasoned with 1 teaspoon of salt, and coated with 1 tablespoon of potato starch - Onion... 1 piece (200g), cut into 1cm thick slices perpendicular to the grain - Cabbage... 1/8 piece (150g), cut into 5mm wide strips - Ginger... 1 piece, grated - Potato starch... 2 tablespoons - Soy sauce... 2 tablespoons - Mirin... 2 tablespoons - Oil... 1 tablespoon 1. In a pot, add oil, half of the onion, half of the chicken, and half of the cabbage, then layer the remaining chicken and cabbage on top. Add ginger, soy sauce, and mirin. Cover with a lid and cook over medium heat. 2. Once steam starts escaping from the gap in the lid, mix the entire contents. Turn off the heat and let it sit for 5 minutes with the lid on, using residual heat to finish cooking.

We’ve prepared dishes like simmered whole eggplants, chawanmushi (savory egg custard), and mushroom rice. We had them for lunch, and everything was delicious 🤤. Haruhi Gohan’s online cooking class is now open for new members ☺️. 　 — **Simmered Tantan-style Hot Pot** - Ground pork: 200g - Ginger (minced): 1 piece - Red chili peppers (chopped): 2 pieces - White sesame paste: 1 tablespoon - Salt: 1 teaspoon - Bean sprouts: 1 bag (200g) - Unsweetened soy milk: 200ml - Sesame oil: 1 teaspoon **Instructions** 1. Add sesame oil and the ingredients from A to a pot, mix briefly, place the bean sprouts on top, cover with a lid, and heat over medium heat. 2. When steam starts to escape from the gap in the lid, cook for 1 minute over medium heat, then remove the lid and add the soy milk. Heat until just before it boils. I'm desperately trying to create alcohol-free days 💦, but it's so enjoyable that I think, "Oh well, it's fine 😀." Today, I'd like to introduce a perfect snack to go with beer 🍺. The trick with eggplants, which tend to soak up a lot of oil, is to coat them with oil first. Celery, eggplant, and chicken gizzards♡. Whip up a snack like this, eat, drink, and watch a movie at a leisurely pace. That kind of holiday is just the best〜🍷. — **Stir-Fried Eggplant and Chicken Gizzards with Salt and Lemon** - Eggplants: 3 - Celery: 1 stalk - Chicken gizzards: 8 pieces (about 160g) - Lemon: 1/2 - Olive oil: 1 tablespoon - Salt: 1 teaspoon **1.** Cut the eggplants into thin strips about 1 cm wide, and slice the celery diagonally into thin slices. Remove the silver skin from the chicken gizzards and slice them thinly. **2.** Add the olive oil and eggplants to a pot and stir. Then, add the celery and continue to stir-fry until the eggplants become tender. Add the chicken gizzards, sprinkle with salt, and mix well. こんにちは🌞大橋由香です。無水調理を初めて作ったのは14年ほど前。塩だけで美味しくなる無水調理に感動し、お料理教室をやるようになってその後お店を開いた。たくさんの人がこの野菜と鶏肉の無水煮込みで感動してくれます✨ ストウブくんは本当にえらい。注意点はいくつかあります。 1. 鍋の半分以上に食材を入れること。 2. 蒸気が出たら極弱火にすること。 3. 強火はNGです。 4. 調味料を入れると浸透圧で食材から水分が出てくるのでふたをする前に入れる 5. ふたを何度も開けないこと → せっかく溜まった蒸気（アロマレイン）を逃がしてしまいます。 6. ストウブの特性【余熱調理】を利用すること。注意点をいくつか守れば絶対うまくいく！最初は怖いかもしれないけど信じてやってみて☺️ キャベツと鶏肉の無水煮込み【仕込み1分】玉ねぎ　1個キャベツ　1/4個鶏もも肉　2枚（600g）塩　小さじ1/4＋小さじ1 油　小さじ1 油、キャベツ、玉ねぎ、塩、鶏肉、塩の順に重ねてふたをし、中火にかける。蓋の隙間から蒸気が出たら極弱火で40分加熱する。できたら冷めるまでおく。 — #はるひごはん　#大橋由香　#ストウブ　#staub #ストウブ料理　#ストウブレシピ　#はるひごはんオンライン　#ストウブ鍋　#料理レシピ　#料理　#レシピ I first made waterless cooking about 14 years ago. I was so impressed by how delicious it could be with just salt that I started holding cooking classes, which eventually led to opening a store. Many people have been moved by this vegetable and chicken waterless stew✨ Staub is truly amazing. Now, here are a few important points to keep in mind: 1. Make sure to fill the pot with ingredients at least halfway. 2. Once steam starts escaping, reduce the heat to very low. 3. Avoid using high heat. 4. When adding seasonings as they can draw out moisture from the ingredients due to osmosis. 5. Do not open the lid multiple times → You'll lose the accumulated steam (Aroma Rain). 6. Utilize Staub's unique feature of residual heat cooking. If you follow these points, it will definitely turn out great! It might seem daunting at first, but trust the process and give it a try☺️ **Cabbage and Chicken Waterless Stew [1-Minute Prep]** - 1 onion - 1/4 cabbage - 2 chicken thighs (600g) - 1/4 teaspoon salt + 1 teaspoon salt - 1 teaspoon oil Layer the ingredients in the following order: oil, cabbage, onion, salt, chicken, and salt. Cover with a lid and cook over medium heat. Once steam starts escaping from the lid, reduce the heat to very low and cook for 40 minutes. Once done, let it cool before serving. —
