☀️2025/03/11に公開- 指定なし3.31%3780《日本の誇り、発酵食品を学ぶ！》 日本の発酵食品には、味噌、醤油、酢、みりん、酒、納豆、漬け物、鰹節などがあり、麹（こうじ）を使った発酵が特徴で、世界でも有数の発酵大国です。� 今日 は 香川県高松市から 発酵食品マイスターの田所美智枝さんに来てもらい皆んなで白味噌の仕込み教室。 普通の味噌の仕込みは何度かやったけど白味噌は初めて。（特に関東では馴染みがない）・・・と言うか好きではなかった。 ところが 先日、沖縄で一番美味しいと思う 居酒屋🏮あやこ で白味噌の料理が出てきてちょっと美味し過ぎて衝撃。 聞けば田所先生の教えだと言う。 その１０秒後には田所先生に電話してアポをとり今日に至りました。 なんと白味噌は４０日で発酵が完了するんです。 ほんと楽しみ！！ マイクロバイオームこそ 健康のキーですよね。 ※ せっかくなのでアナタのお宅のお味噌をチェックしませんか？ ほんとの味噌は 玄米（有機）と塩 だけです。 本来は発酵に1年以上かけるけど、大量生産で安価な味噌はスピードが命なので、短期間で出荷します。 味噌を熟成するための保管場所や製造管理が不要になり、コストが削減できますが 発酵が不充分な味噌は美味しくないので、アミノ酸などの化学調味料で味を整えて、加熱処理して酵母菌や酵素を失っているます。（加熱で大切な菌は即死） 要するに 残念だけど 味噌風調味料が世の中の大半です。 後世に伝えられるちゃんとした食品を知りましょう。発酵は日本の誇りですから。 （アムウェイはヤマキ醸造の作る味噌を扱ってますが レジェンド宅にお泊り会！》 少し長い 30数年前にビジネスをアーリーリタイアをした修二さんはハワイに永住. 夢だったアーティストになりスモールビジネスも色々と展開。 ヨガウェアのリアルマカハは大人気プラントに成長。ホノルルに不動産もいっぱいあるけど 最近はマカハ（オアフ島の左側）に 一軒が１エーカー（1,200坪）のゲートコミュニティ（入り口の警備が完全な地区） にとんでもない体育館もある豪邸を手に入れた。お世辞抜きにマウイ島とハワイ島の良い所を足して2で割った様な最強な環境の場所。そこを数年かけて庭からギャラリー、ジャグジーなどを作って悠々自適に暮らす。朝は小鳥（野鳥）のうるさい程のさえずりで起こされる。庭には自生のマンゴー🥭やオレンジ🍊バナナにパパイヤ、小鳥のピヨちゃん（サフランフィンチ）はつがいで暮らし巣箱で子育て中、ピヨちゃんは巣箱の御礼にどこかからタネを持ってきてくれてバルコニー脇に蒔いたようでそこからパパイヤの木が成長。もうマンガみたいな大自然との生活。 と思ったら ゼロから一軒家をデザインしたいと３０代の頃から思い続けたプランをいよいよ実行。 今の豪邸の数軒となりの空き地に1,200坪の中に 噴水付きのロータリー（笑） 大きな観音開きのドアを開けると巨大なリビングルーム、その向こうには１７メートルのインフィニティプール、そこから滝があって 地下は 防音のスタジオ、そしてその先にヨガをやる芝生の広場、そしてマイ テニスコート、その先には ゴルフ場があり ずっと先にはドドドーンと太平洋を見下ろす・・・そんな家を建築中。 ７０才になっても少年みたいに夢を片っ端から叶えようとする姿勢にほんと尊敬する。 面白い話もいっぱい聞かせてもらい素晴らしい時間になりました。 Thank you for being my friends！2025/02/23に公開-
