本日、ようやく湯河原「飯田商店」に伺った。ずっと来たかった。ずっと、食べたかった。その一杯に出会って、私は思った。これはラーメンじゃない。ラーメンという形を借りた、一皿の料理だ。出汁は鶏と豚の重なり。醤油は厳選に厳選を重ね、舌にふわりと寄り添う。手揉みの麺はしなやかで、出汁と一体になって口の中をすべる。具材も一切妥協がない。九条ネギに、佐賀の海苔、比内地鶏と金華豚のワンタン。それぞれに物語があり、すべてが「飯田将太」のフィルターを通して、一杯に込められていた。カウンター越しに見た飯田さんの所作は、寿司職人のようだった。静かに、しかし一切の無駄なく、堂々と。厨房は驚くほど磨かれていて、箸を持つ手が自然と正されるような気がした。「料理の道を諦めかけていた」そんな飯田さんが、〈支那そばや〉の一杯に出会い、再び火がついたという。「人を感動させる料理を作りたい」その想いが、今日、私の目の前に存在していた。2022年、価格を見直したのも、次の世代のためだという。原価をかけ、技術と心を込めたラーメンを、ちゃんと商売にできる未来を。「一度も満足したことがない」その言葉に、飯田さんのすべてが詰まっていた。一杯のラーメンに命をかける男がいる。その味を前にしたら、誰だって心が震える。湯河原で、ラーメンの未来を見た気がした。 Today, I finally made it to Iida Shoten in Yugawara.
