全く印象が変わるので 違うパンになってしまうのが面白い。 こちらはチョコチップだけにしようか 迷ったのですが、 いちごとチョコも合うね〜と 合わせてみたらこれが◎ 甘酸っぱい香りとチョコ、 いい感じでしたよ〜♪ 先日のシンプル生地の強力粉を ５g減らしてココアを５g加えるだけ。 水の量は粉によって変わるので、 １０５gから足していってください。 私が使うゆめちからブレンドの場合は 水１０５g〜ですが、 ゆめちから１００%になると 水１１０g〜。 その他麦の質によって吸水が異なるので 気をつけてくださいね〜 ペットカップ75mm ６個使用 ✏︎ーーーーーーーーーーーーーーーー 【基本のシンプル生地チョコアレンジ】 ✏︎ーーーーーーーーーーーーーーーー ⚫︎強力粉 …１５５g ⚫︎純ココア …５g ⚫︎塩 …３g ☆砂糖 …１５g前後 ☆ドライイースト …３g ▲ぬるま湯 …１０５〜１１５g △無塩バター …１０g前後（５g〜） ーーーーーーーーーーーーーーーー チョコチップ …６０g〜 粒ジャム …３０g〜 成形は前回と全く同じ。 具材をチョコチップに変えただけ。 工程の写真参照📸 粒ジャムはなくてもOK! ーーーーーーーーーーーーーーーー 簡単な流れは ・捏ね ・一次発酵３０度で２倍になるまで ・フィンガーテスト ・６分割 ・丸め直して１０分ベンチタイム ・成形 ・３０度で二次発酵 ・表面に薄く卵を塗って アーモンドスライスを散らす （今回は霧吹きで水をふってから アーモンドスライスのせてます） ・１８０度で１０分焼成 ーーーーーーーーーーーーーーーー 今回は焼き色を強く付けないため １８０度にしています。 生地アレンジは、 【純ココア】を以下に変更可能 それぞれ製菓用の粉末を使うと 色が綺麗に出ます！ ⚫︎お抹茶 ⚫︎ほうじ茶 ⚫︎紅茶 など！ お抹茶やほうじ茶の場合、 チョコチップの代わりに餡と胡桃 相性良いですよ〜♪ 紅茶の場合はカスタードや ホワイトチョコ、レモンピールなど 良いですよねぇ♡ 他に、先日のシンプル生地の 仕込み水を紅茶やコーヒーに変更する 事もできます◎ この純ココア生地の場合も ・ホワイトチョコとチョコ ・カスタードとチョコチップ ・チョコカスタード ・チョコと胡桃やナッツ などなど〜 湯種を使っているのでもっちりしっとり グラハムの栄養もたっぷり入ったパンなので 毎日の朝ごはんにぴったり！ サンドイッチにしたりトーストしたりと シンプルながらアレンジも楽しめるから嬉しい♡ クラ友さんが作っていたキムチサンドと サクサクにトーストしてバターを塗るのがお気に入り✨ ＊ 年度末で子供たちの学校や習い事に仕事などバタバタしてましたがようやく春休みに入って少し落ち着きそう☺️ かと思ったらまたすぐに４月で新年度が始まるんだけどね💦 ４月から長男は高2、次男は中3受験生😱、長女は小6で最後の小学校生活になります 小学校もあと1年っと油断してたら なんと役員のクジが大当たり🎯 なんか私よく、こういうクジだけ当たるの💦 子供3人いるともうしょうがないよね… この際、最後までお勤め頑張ります😅 新年度も忙しくなりそうだけど ホッとしました❣️ ・ このパンはあの有名シェフさんが、レッスンで焼かれていて気になっていたパン。 私はレッスンは受けていないので、Google先生とYouTube先生に聞きながら作ってみました。 ・ 粉は北海道産小麦のヴァンドノールをメインに、タイプ100をブレンドしています。 酵母はサワードウと、ホップ種が元気か確認するために元種作ったのでそれも加えています。 ・ 是非作ってみて下さい❤️ <材料> ドライイースト 11g ぬるま湯 500g ⭐︎全粒粉 300g ⭐︎強力粉 200g ⭐︎ひまわりの種 160g ⭐︎塩 15g ⭐︎お酢 25g トッピング:オーツ麦、ひまわりの種など <作り方> ①ボウルにドライイーストとぬるま湯を入れて混ぜる。 ②大きいボウルに❶と⭐︎を入れ、木のヘラなどでしっかり混ぜ合わせる。
