○ジャガイモ（皮なし） 250グラム （今回は冷凍食品使用） ○ハーフスライスベーコン 4枚 ○塩コショウ 少々 ○マヨネーズ 適量 ○ピザ用チーズ 適量 ○粗挽きブラックペッパー 少々 ○乾燥パセリ 少々 ＊強力粉は外国産(カメリヤ)を使用 ＊インスタントドライイーストは赤サフを使用 ●焼き時間 200℃で12分 ＊TOSHIBA石窯オーブンER-XD3000使用 ーーーーーーーーーーーーーーーーーーーーーー ●作り方 ①100均タッパー内で生地を作ります。 ＊一次発酵までの生地作りの詳細は動画参照してください ②生地を取り出し、6分割して軽く丸め、10分ベンチタイムを取ります。 ③ベンチタイム後の生地を直径12cmの円形に伸ばし、生地中心にジャーマンポテトを乗せて包み込みます。 ＊ジャーマンポテトの作り方の詳細は動画参照してください ④成型後の生地に、ラップと濡れ布巾を被せて、一回り大きくなるまで二次発酵します（オーブン40°C発酵機能で20分～）。 ＊時間はあくまで目安です(こまめに発酵具合を見てください） ⑤生地表面に全卵(生地に使った余り)を塗り、ハサミで表面を十字にカットし、マヨネーズを絞り入れ、ピザ用チーズをたっぷり乗せて、ブラックペッパーを振りかけます。 ⑥200℃に予熱したオーブンで12分焼いて完成です。 ＊焼き時間はご家庭のオーブンの性能に合わせて調節してください ＊TOSHIBA石窯オーブンER-XD3000使用 ＊お好みで乾燥パセリを振りかけてください ーーーーーーーーーーーーーーーーーーーーーー 3月3日といえば！！ ひな祭り♡ ということで… 今日のテーマはこちら！！ 『ウマウマ惣菜パン祭り〜♪』 祭りしか合ってなくて申し訳ないんですが(笑) メチャクチャ美味い惣菜パン出来ました〜✨️ もちろん… ひな祭りのような 春のパステルカラー的要素一切なし！！ ビックリするほど茶色(笑) 当たり前ですが… 春は全く感じない！！ でもでもでも〜 『本気で美味いんです〜♪』 少し甘めなSAKU特製惣菜パン専用生地に包まれた シンプルジャーマンポテト(ただ混ぜただけのやつ〜) それらを覆い尽くすほどの勢いで盛られた とろ～りチーズ♡ おいSAKU！！胸焼けするだろ(；´Д｀) ストレートで金サフ3.4gで作りました🙌 大好きだけど難易度の高いブリオッシュ𓈒𓏸 こけしさんの手順どおり丁寧に作ったら、すごく良い生地に仕上がったよ😆 卵とバターたっぷりなのに油っぽくない、さっくり軽いのに濃厚で口溶け◎💕 本当にブリオッシュ生地大好きです( ˊᵕˋ* ) 型はないので丸で焼いて、トレーに乗せて、 いつもよりちょっとバター多めでリッチな風味に焼き上がり！ ２斤型 粉600gで焼いたのだけど、窯伸びが悪くて小ちゃくなっちゃった🥲最近食パンを焼くと粉の量のわりに出来上がりが小さくなってしまい、ちょっと損した気分…. 今回、二次発酵は型の9割くらいのところで焼成したのだけど、過醗酵だったのかなぁ、、、、？🥲 〈追記〉 →窯伸びしない原因がわかったので備忘録として追記。 オーバーナイト発酵させているので、おそらく一次発酵の時点で過醗酵になっていた。600gと大容量の生地だった為、中心まで完全に冷えて低温発酵が開始するまでに通常の発酵が進んでしまっている可能性が高い。 ⭐︎対策⭐︎ ・生地冷蔵法→生地玉冷蔵法に変えてみる 一次発酵と分割・丸め作業終了後に冷蔵庫へ。 翌日は成形から開始。 ・状況を見て、野菜室（3~7℃）→冷蔵室（2~5℃）、チルド（0~3℃）に移動させる 200℃-25分 材料(２斤型) 強力粉 560g 薄力粉 40g ドライイースト 4.5g ※オーバーナイト発酵の為半量 お湯 200g 豆乳 200g きび糖 40g 塩 8g バター 50g ————————————— 中村ぱん 〜育児の合間にコネコネ〜 夫婦で始めたパン作り。
