🍋 見惚れてしまうほど綺麗な緑色の皮をしたグリーンレモン。 段々と黄色になってくるようですが、採れたてを使ってジャムにして、今年初めてグリーンレモンケーキを作ります。2枚目は、左がイエロー、右がグリーンのジャムです。ジャムの時点では結構違います。 🍋 🍋 グリーンレモンケーキ Cake au citron vert 🍋 前回お知らせしました通り、11月はレモンのお菓子です。 10月から12月頭くらいまでの時期に収穫できるグリーンレモンをジャムにして、レモンケーキを作ります。 🍋 ジャムは何色になるかなとドキドキして作りましたが、色褪せた緑色になりました。爽やかでしっかり酸味も効いています(写真はジャムにする直前で、これがもう少し色褪せる感じです)。 🍋 果汁はそこまで沢山とれないのでアイシングをどうしようかなと悩んだのですが、せっかくなのでグリーンレモンを贅沢に搾って使うことにしました。 🍋 🍋 グリーンレモン Citron vert 🍋 今年の11月はレモンのお菓子を作ります。 10月から12月頭くらいまで、グリーンレモンの時期と知ってはいたものの、どうなんだろうと手を出さずにいましたが、レモンケーキにしたら面白いんじゃないかと思い作ることにしました。 🍋 グリーンレモンは12月になると熟されてイエローになります。イエローになる前に摘んだグリーンは、酸味が強くとても爽やかです。香りが全然違うんです。ライムのような爽やかさを感じました。 🍋 グリーンで作ると、ジャムもグリーンです笑。ピールも作ってみましたが、固い皮をある程度柔らかくするのに、イエローより長時間煮込んだので、そこまで緑ではないですがうっすら緑です。 🍋 🤲 大仏様バッカリ BAKKARI DAIBUTSUSAMA 🤲 一番シンプルなサブレ。 シンプルだからこそ、素材をより大事にしたいです。 北海道産の粉「ドルチェ」と明治発酵バター、粉糖、牛乳、塩のみで作っています。型抜きが綺麗に出るのでこのレシピで型抜きクッキーを色々作っています。 🤲 🎃 かぼちゃサンドクッキー 🎃 自家製かぼちゃクリームを生地に練り込んで焼き、クリームを挟んだクッキーです。 今年のかぼちゃは、神奈川県三浦市のものを使用しています。約1年前から普段のお野菜の殆どを三浦で採れるものにしたのですが、それがとても美味しくて(毎回買うのは朝採れ😍)今年は三浦のものにしました。カットしたらちょっとハート型っぽくて可愛かったです🥰 🎃 サンドしているクリームですが、パンに塗ったりクッキーにディップしても美味しいので簡単なレシピをご紹介します。かぼちゃの美味しさをそのままに、かぼちゃとお砂糖のみで作ります。お砂糖は家にあるもの何でもOK！ ①適量のかぼちゃ(1/4あれば十分です)を用意 ②皮を切り落とし、適当に小さめにカット ③水洗いして軽く水気を切り、耐熱ボウルに入れてラップ、レンジ600Wで3分加熱 ④軽く全体を混ぜて、さらに1分加熱 ⑤漉せそうな柔らかさになっていたら裏漉し。まだ固い場合はプラスで1分加熱。 ⑥漉したたかぼちゃの重さを計ってその40%のグラニュー糖を計る。鍋に両方入れて軽く混ぜる ⑦中火にしてヘラで混ぜるとだんだんと沸々してくるので弱火にし、少し固めになったら出来上がり！5分くらい練る感じです。焦がさないように注意⚠️ やっぱり自家製って良いですよね！ 🎃 🐿️ 9/30はくるみの日。 🐿️ 9/30はくるみの日でした。「く(9)るみ(3)はまるい(0)」と読む語呂合わせからきているようです。なるほど〜🧐 🐿️ くるみが大好きなので、くるみが入っているキャラメルオノワで何か良い写真が撮れないかなと思い、急遽、山でお菓子を撮影することに⛰️ ※「キャラメルオノワ」はウルーズウールで人気のクッキーです。くるみ型でプレーンの生地を焼き、その間にローストして刻んだくるみとキャラメルを混ぜたものをサンドしています。 鎌倉では野生のリスをよく見かけるので、奇跡が起きないかな(キャラメルオノワとリスのコラボ😍)と期待していきましたが、逃げ足が早くて近付くこともできませんでした🤭(1匹見かけました✌️) 🐿️
