- 10th Anniversary Exclusive Item - Colombia La Palma & El Tucán Legendary To celebrate our 10th anniversary, we’ve received a special lot from the Legendary Series by La Palma & El Tucán. Located in Cundinamarca, Colombia, La Palma & El Tucán is an innovative farm dedicated to environmental regeneration and sustainable coffee production. They grow coffee in harmony with nature, contributing to both exceptional quality and the well-being of the local community. By practicing polyculture—an intercropping method incorporating diverse vegetation such as banana, hass avocado, balú, and pink cedar—they nurture fertile soil and achieve natural pest control without relying on chemicals. The lot we’re introducing is a Geisha from La Palma & El Tucán’s prestigious Legendary Series—an elite line representing less than 1% of their total production. This series showcases the pinnacle of their craft, reserved only for the most outstanding lots. What makes this coffee even more remarkable is its unique lactic fermentation process: the cherries are fermented for 85 hours, followed by 24 hours of mucilage fermentation, and then carefully sun-dried. - 10th Anniversary Exclusive Item - Colombia Huila Las Flores Special KOJI Lot To celebrate our 10th anniversary, we are releasing a special collaboration lot created by our Quality Controller, Mr. Fujisaki, and Mr. Jhoan Vergara of Las Flores Farm. Las Flores Farm, located in the Huila region of Colombia, is led by Jhoan Vergara, who actively researches new coffee varieties and processing methods. This particular lot is processed using a Koji Fermentation method that incorporates Japanese koji mold. The koji used was carefully selected by Fujisaki, sourced from Kojiya Sanzaemon(糀屋三左衛門 @kojiyasanzaemon ), a traditional koji manufacturer founded in the Muromachi period. The harvested cherries are first placed in a stainless-steel tank known as a “biomaster” for an initial 12-hour fermentation. During this process, the juice extracted from the cherries, called mosto, is drawn out and diluted with warm water at 35°C to activate the koji mold. This koji-infused mosto is then returned to the fermentation tank, where it undergoes a 60-hour anaerobic fermentation. This special fermentation process using koji brings out an exceptionally juicy fruit character reminiscent of blueberry and cassis, along with a deep, layered sweetness. - New Beans Arrival - 【Hard To Find】 Costarica Tarraz Hacienda Copey ITADAKI Hacienda Copey, a farm that has won the Cup of Excellence (COE) twice, now introduces a special Geisha. Established in 2011 in the Copey Canyon of the Tarrazú region, this farm is known for its high altitude and extreme temperature fluctuations, creating a unique microclimate that enhances its distinctive flavors. This lot comes from “ITADAKI,” the highest section of the farm. Due to the prolonged low temperatures, the coffee cherries grow slowly, allowing them to develop high sugar content, which contributes to excellent acidity. For this lot, fully ripe coffee cherries are harvested and then undergo 120 hours of anaerobic fermentation in sealed bags. TA stands for Thermal Anaerobic, meaning the cherries are fermented in bags under warm conditions. - New Beans Arrival - 【Competition】 Colombia Huila Las Flores The Las Flores farm is located in the Acevedo area of Huila, Colombia, and is operated by Jhoan Vergara and his family. Benefiting from a warm climate and fertile soil, the farm is renowned for its innovative focus on varieties such as Pink Bourbon, Geisha, and Java. Leveraging the knowledge he gained at a local coffee academy, Jhoan actively researches new coffee varieties and processing methods, making significant contributions to the improvement of specialty coffee quality in the region. This lot features the Java variety, processed using the fermentation methods Las Flores excels at. After selection, the cherries undergo thermal shock treatment in 55°C hot water. They are then subjected to 60 hours of anaerobic fermentation in sealed tanks, followed by 12 hours of aerobic fermentation. This is further complemented by an additional 12-hour submerged anaerobic fermentation with water added to the tank. Finally, the beans are carefully dried using a stainless steel dehumidifier. These intricate steps amplify the unique aroma of the Java variety. This Java boasts a vibrant and juicy aroma reminiscent of pomegranate and cranberry, with a distinct sweetness akin to bubble gum. - New Beans Arrival - 【Hard To Find 】 Colombia Cauca El Paraiso (Antimaceration) A new coffee has arrived from El Paraiso, a farm renowned worldwide for its innovative processing methods and highly regarded by roasters and coffee enthusiasts alike. The farm’s owner, Diego Samuel Bermudez, has dedicated himself to developing unique fermentation and drying techniques that continue to amaze the world with their innovation. Today, we are introducing a special process called “Antimaceration.” This method involves using a vacuum pump to create negative pressure inside a tank, where the fermentation takes place. During this process, the liquid inside the coffee cherries is extracted and collects at the bottom of the tank. The cherries soaked in the liquid at the bottom are exposed to an oxygen-free environment, allowing the liquid to fill the porous cavities of the coffee beans. Additionally, this process breaks down polyphenols, gradually turning the beans a deep brown color. As the liquid permeates the beans, it imparts a rich color and intensified flavor. The result is a coffee with the rich flavors of chocolate and blackberry, complemented by a juicy, red wine-like profile. - New Beans Arrival - 【Competition】 Panama Boquete Elida Loma Lot Here’s the English translation of the text: To mark the beginning of 2025, we are pleased to offer a special auction lot from Lamastus Family Estates. The Elida farm is located in the Boquete region of Panama, specifically in Alto Quiel. The Lamastus family, owners of the Elida farm, has been producing coffee for four generations. In 2016, they won 1st place in the Best of Panama (BoP) competition in the Geisha Washed category. Since then, the Lamastus Family has repeatedly won in BoP. In addition to Elida, the Lamastus family owns the El Burro farm and the Luito Geisha farm. This lot is one that has been won at their private auction, the “Lamastus Family Estates Auction,” featuring coffees from these three farms. This Loma lot comes from a special plot located within the Baru Volcano National Park at the Elida farm. The cherries underwent four days of anaerobic fermentation while still on the fruit, allowing the unique qualities of the fruit to be fully expressed. It features a bright aroma reminiscent of Mandarin Orange and a floral fragrance similar to Jasmine.
