Awa Gesho is a unique decorative technique that reuses discarded, unglazed porcelain—often damaged during production—by grinding it into powder and mixing it into the glaze. Each cup is handcrafted, with delicate bubble-like patterns that give it a one-of-a-kind, natural beauty. Did you know that once porcelain is fired, it can’t return to the earth? Typically, products that break, chip, or don’t meet quality standards are discarded. This is common in the industry. Most Arita porcelain is made from natural clay sourced from Amakusa City, Kumamoto—a limited resource. - New Beans Arrival - 【Hard To Find】 Ethiopia Sidama Tamiru Alo Berry (Underscreen) Mr. Tamiru Tadesse, one of Ethiopia’s most prominent coffee producers, boasts an impressive track record, including first and fifth place finishes in the 2021 Cup of Excellence. Now, we are excited to offer a special lot of coffee beans, carefully selected by Tamiru himself for their exceptionally small size. The defining characteristic of this lot lies in its screen size. While the average screen size for Ethiopian coffee is 14, this lot features beans with a screen size of just 12. Interestingly, this coffee was initially intended for submission to the 2021 Cup of Excellence but was disqualified due to its unusually small size. “Underscreen” beans, like this lot, are not unique to Tamiru’s production—they are also found in regions like Guji and are renowned worldwide for their bold flavors. Among these, Tamiru named the beans grown in the unique environment of Alo village in Bensa **“ALO Berry.”** This lot, cultivated at an exceptional altitude of 2,380–2,480 meters, has been processed using the traditional Natural Process. This method enhances the coffee’s juicy fruit notes, reminiscent of raisins and blueberries, while imparting a delicate flavor profile that evokes black tea. Only fully ripe coffee cherries are carefully selected, and they undergo anaerobic fermentation in sealed tanks for three days along with Mosto (a coffee cherry juice). This fermentation process enhances the intensity of the flavor and allows you to more clearly experience the various berry flavors typical of Ethiopia. Afterward, the coffee is slowly dried for 30 days in a place out of direct sunlight. The slow drying process contributes to the clean cup and sweetness in this coffee. - New Beans Arrival - ⁡ 【Competition】 Guatemala Huehuetenango El Eden (2024 COE No.3) We are thrilled to announce the arrival of a very special Geisha from Guatemala, which won 3rd place in the Cup of Excellence. El Edén Farm, located near Finca La Reforma, was established in 1960 by Mr. Leonardo Perez y Perez and later inherited by his son, Mr. Leonardo Rene Pérez Hidalgo. In 2019, considering factors such as sunlight, airflow, altitude, and terrain, the farm transitioned from cultivating existing varieties to planting Gesha. The Gesha variety here was grown from seeds collected from Finca La Reforma’s 2018 COE-winning lot. Given the excellent growing conditions and outstanding cupping results, the farm has decided to expand Gesha cultivation further, marking it as a promising farm for the future. This Gesha, carefully processed using the traditional washed method, features vibrant and crystalline aromas. Expect a delightful combination of citrusy notes reminiscent of lemon tea and orange, paired with a complex floral character. This exclusive lot was secured by us at the COE auction. Don’t miss the chance to savor this world-class coffee available only here. - New Beans Arrival - 【Competition】 Colombia Huila El Diviso (Ombligon) We’ve received the Competition Lot of the Ombligon from El Diviso Farm! El Diviso has been cultivating coffee for 26 years in the Brussels area of Huila. Mr. Néstor, the second-generation owner of the farm and his brother, Mr. Adrián, now grow six varieties, including rare ones. Collaborating with other young farm owners in the region and local coffee research institutions, they constantly innovate by experimenting with diverse fermentation materials and methods. The Ombligon variety gets its name from the Spanish word for “belly button,” inspired by the shape of its coffee cherries. This coffee stands out with its tropical fruit-like flavors and a rounded, full-bodied mouthfeel. The process involves using only coffee cherries with a sugar content of 24° Brix or higher. These cherries undergo a 24-hour aerobic fermentation in plastic drums, followed by 200 hours of anaerobic fermentation. Finally, cherry yeast is added for an additional 80-hour immersion fermentation. Through this multilayered fermentation process crafted by Mr. Néstor, the Ombligon variety’s unique notes of cassis, cherry, and chocolate are elevated, allowing for diverse flavor experiences depending on the brewing method. -New Beans Arrival- 【Competition】 Panama Boquete Abu GW2610 Panama Boquete Abu GN1847 We’ve received two types of Geisha beans—Washed and Natural—from Abu, which has a history of winning at the Best of Panama competition. For the Washed Abu GW, cherries undergo a 48-hour “Dry Fermentation” in sealed tanks. Afterward, they are thoroughly washed by hand with mountain spring water and slowly dried on elevated beds for 15 days. “Dry Fermentation” is similar to the standard washed process but uses no water during fermentation, making it a more environmentally friendly method. This process results in a cup with vibrant aromas like orange, jasmine, and honey, and a clear, lingering finish. For the Natural Abu GN, cherries are first dried on elevated beds for 72 hours, then placed in sealed bags and submerged in mountain spring water for a 72-hour anaerobic drying process. After this, the cherries are transferred back to elevated beds for a slow, 25-day drying period. This careful drying and fermentation process brings out vibrant and rich sweetness in this lot, with flavors reminiscent of Raspberry and ripe Grape. - New Beans Arrival - ⁡ 【Innovation 】 Colombia Huila Monteblanco We’ve just received a new coffee from Mr. Rodrigo, the owner of Monteblanco Farm. Monteblanco Farm is a family-run, traditional coffee farm located at an altitude of 1,730 meters in the village of La Tocora, under the jurisdiction of San Adolfo, Acevedo, in the Huila Department. Mr. Rodrigo, who has won numerous awards, has a broad approach to processing, delivering exceptional coffee through innovative methods developed over the years. This lot, which achieved the highest score within the farm, is marked “Grand Cru”—a French term meaning “premium,” and a designation given to the finest vineyard plots in the wine industry. He explains that this process, involving three stages of fermentation with precise control, has created an unprecedented flavor profile for the Geisha variety. First, the beans undergo 48 hours of fermentation in a GrainPro bag, a plastic container, followed by another 12 hours of fermentation post-pulping. Finally, they are anaerobically fermented for 60 hours before drying. The result is a coffee characterized by floral aromas reminiscent of ginger and herbal notes, along with a fruity, juicy profile like muscat.
