- New Beans Arrival - ⁡ 【Competition】 Panama Chiriqui Finca Nuguo Finca Nuguo is located at an altitude of 1,850 meters in the Renacimiento region of western Panama, surrounded by pristine forests and abundant rainfall, providing an ideal environment for producing high-quality coffee. In this region, the winds from the Caribbean Sea and the Pacific Ocean intersect, creating unique climate conditions, with each farm experiencing distinctly different weather patterns. Nuguo gained international attention in 2021 by winning the Geisha Natural category at the "Best of Panama (BOP)" competition. For this lot, to optimize the fermentation process, the harvested coffee cherries were transported to David City, where they were fermented for two days at a temperature of 32 degrees Celsius. Following that, they were slowly and carefully dried in an environmentally controlled dark room. This Nuguo lot boasts a rich flavor profile characterized by jasmine-like floral aromas and juicy, fruity notes reminiscent of grapes and oranges. It is an extremely rare Competition Lot, and we invite you to take this opportunity to enjoy the essence of Nuguo. - New Beans Arrival - ⁡ 【Competition】 Panama Volcán Finca Deborah (Enigma) A special Geisha from Finca Deborah, renowned worldwide, has arrived. Finca Deborah is located in Chiriquí, one of the world’s premier high-altitude coffee-growing regions. The farm’s owner, Jamison Savage, believes that a balanced ecosystem is essential for sustainable coffee production. To preserve the terroir, every effort is made to avoid the use of herbicides and harmful chemicals. As a result, lush, carpet-like cover crops flourish between the coffee trees, creating a beautiful rainforest habitat for rare birds and insects. Despite his coffee being featured in numerous prestigious global competitions, Jamison is always exploring new methods and continues to experiment with agricultural techniques and processing improvements. In this lot, only the sweetest cherries are meticulously selected, and they undergo anaerobic fermentation in a CO2-filled tank while still attached to the cherry. Afterward, they are dried for 20 to 25 days on a three-tiered African bed, with strict control over temperature and humidity. This coffee offers a rich, ripe sweetness reminiscent of grape and pineapple, alongside an incredibly smooth and delicate aroma. - New Beans Arrival - ⁡ 【Competition】 Colombia Cauca El Paraiso (ZEO) A special Geisha coffee has emerged from El Paraíso farm, which continues to develop innovative processes. Diego Samuel Bermudez, the owner of El Paraíso farm, is dedicated to creating unique fermentation and drying techniques, consistently surprising the world. This lot has been in processed using his new process called the “ZEO process.” The name ZEO is derived from zeolite, a porous mineral with fine holes. In this process, harvested cherries are first rapidly frozen at -40°C. Then, using a drying machine equipped with zeolite and a vacuum pump, the drying process is completed within eight hours. This method not only eliminates the risk of mold and spoilage but also avoids the fermentation process that typically occurs in standard refining methods. As a result, the ZEO process captures the essence of each coffee most faithfully. This allows for a cup that showcases the distinctive rose-like floral notes of Geisha, complemented by a beautiful fruitiness reminiscent of lime and nectarine. - New Beans Arrival - ⁡ 【Competition】 Colombia Risalarda Mikava Mikava is a small but excellent coffee farm spread across 14 acres in the heart of the Colombian Andes. Paul Doyle and his son Kevin are coffee and wine lovers, and their passion for growing complex, flavorful coffee led them to purchase the farm in Risaralda, Marsella, Colombia. The Doyle family has been working on producing the highest quality coffee for over 35 years. For this Gesha Hybrid Washed, the coffee cherries are first placed in sealed tanks and fermented anaerobically for six days. After pulping, they are returned to the coffee cherry juice, called the most, which is then fermented for another 24 hours. The most is made from not only the cherries picked that day, but also the cherries picked the day before, which adds more homogeneity and beneficial bacteria, resulting in complex flavors. - New Beans Arrival - ⁡ 【Competition】 Panama Boquete Altieri We have received a special Geisha coffee from Altieri Specialty Coffee, one of the top coffee farms in Panama. Altieri Specialty Coffee is a family-owned brand that has rapidly grown due to its exceptional quality and a highly professional team. Located on the eastern slopes of the Baru Volcano, in the region known as Callejón Seco, at an altitude of 1,600 to 2,200 meters, the farm consists of two estates: Alto Quiel (Mima Estates) and Alto Lino (Pipim Estates). At the 2020 Best of Panama competition, Altieri Specialty Coffee won awards in both the Geisha Washed and Natural categories, consistently producing high-quality coffee. For this particular lot, the coffee cherries undergo an initial drying process on African beds in a greenhouse for four days. After reaching around 45% humidity, they are transferred to special GrainPro bags for three days to complete the fermentation process at low humidity. The cherries are then returned to the African beds for an additional 28 days of careful drying in the greenhouse, which helps to bring out a well-rounded sweetness. The result is a rich coffee with notes of grape and raspberry, offering a full-bodied fruity flavor and a smooth, refined texture. We hope you enjoy this exceptional cup. - New Beans Arrival - ⁡ 【Innovation】 Colombia Cauca El Paraiso We received a new coffee made using a unique process from El Paraiso, a famous farm in Colombia that has also won a Cup of Excellence. El Paraiso farm is located in Cauca department in southwestern Colombia. Farm owner Diego Samuel Bermudez is an artisan who creates original flavors by focusing on anaerobic fermentation and developing unique fermentation and drying methods. The Maragogipe variety we received this time is a mutation of the Typica variety, which has the largest seeds among coffee varieties. This variety usually requires a lot of nutrients because of its large seeds, and the flavor tends to be flat, but this Maragogipe receives sufficient nutrients and maximizes its rich flavor. In addition, this lot uses a special fermentation process using Aspergillus Orizae. The koji mold is first cultivated on the dried coffee pulp and husk for four days, and then added to the coffee cherries. The coffee then undergoes a further 4-day fermentation period to allow the gorgeous aromas derived from fermentation to take hold. This process accentuates Maragogipe’s unique rich flavor, resulting in a unique coffee with a fruity sweetness reminiscent of mango and a gorgeous, spicy aroma like Yuzu. This farm was started in 2001 by Carlos Iturralde and his daughter Mariana, with the desire to prove that Bolivia could produce world-class coffee. In 2009, it won first place in the Bolivian Cup of Excellence, making its name known around the world. - New Beans Arrival - ⁡ 【Hard To Find】 Bolivia La Paz Las Alasitas A special Gesha from Bolivia joined the lineup. Mr. Pedro Rodriguez, who runs Las Alasitas farm, is a leading figure in Bolivia’s specialty coffee scene. In recent years, coffee cultivation in Bolivia has been in decline due to changes in the situation and the shift to coca cultivation. Mr. Pedro stepped up to address this situation. Originally an importer, he now runs 11 coffee farms. He is also involved in projects to share the know-how he has cultivated in coffee cultivation and management with other farmers. This lot from Las Alasitas has been refined using a slightly different process called Washed with most. In regular Washed coffee, the pulp is removed from the harvested coffee cherries, and then the cherries are soaked in water to remove the mucilage that surrounds them. However, in this process, after removing the cherry pulp, the cherry is soaked in juice (most) squeezed from the cherry pulp and fermented for approximately 70 hours.
