- New Beans Arrival - ⁡ 【Competition】 Panama Chiriqu Finca Bernardina #799 From the lush mountains of Renacimiento in western Panama’s Chiriquí region, we are thrilled to introduce a beautiful Geisha from Finca Bernardina — a farm deeply connected with nature. Located within Amistad National Park, about one-quarter of the estate is preserved as untouched native forest, allowing diverse flora and fauna to thrive. Under the gentle shade of natural trees, the coffee cherries mature slowly, developing rich aromas and a refined sweetness. The name “Bernardina” comes from the grandmother of current owner Felix Aguilar, who began cultivating coffee here in the 1960s. Through three generations, the family’s passion for coffee and respect for nature have evolved into a truly sustainable approach to coffee production. This lot was carefully processed: fully ripe cherries were selected and fermented for about eight days in polyethylene bags at an average temperature of 22°C. They were then dried gradually on triple-tier beds inside a greenhouse — a meticulous process that creates a clean yet complex cup. In the cup, you’ll find bright notes of cherry and blackberry, elegant florals typical of Geisha, and a lingering, graceful finish. Experience the harmony between nature and craftsmanship in every sip. - New Beans Arrival - 【 Hard To Find 】 Ethiopia Tamiru Tadesse Sky Project Alo Coffee, produced by the celebrated Ethiopian producer Tamiru Tadesse, brings us a truly unique lot featuring the innovative TIM (Terroir Intensified Maceration) process. Developed by Tri-Up in Taiwan, this method highlights the terroir by fermenting the coffee cherries together with microorganisms collected from the cherries and their environment — enhancing the coffee’s natural character and depth. The cherries are fermented anaerobically for three days with their own juice, under carefully controlled temperatures — starting warm, then cooled down to around 10–13°C — and then slowly dried in whole cherry form for five weeks. The result is a coffee that feels closer to wine — elegant, expressive, and full of character. Enjoy rich, layered sweetness like grape and chocolate, beautifully balanced by a bright acidity. A truly innovative cup worth experiencing. - New Beans Arrival - ⁡ 【Competition】 Brazil M&F Coffee Bioma Cafe (2024 COE EXP #1) A truly exceptional lot has arrived from Minas Gerais, Brazil, crowned 1st place in the Cup of Excellence 2024 Experimental Category. Produced by Flávio and Marcelo of M&F Coffee, two lifelong farmers who met in 2001 and shared a mission — to cultivate crops of true value. In 2010, they established their own farm dedicated to specialty coffee, continuously delivering outstanding quality to coffee lovers worldwide. This lot features the Arara variety — a relatively new Brazilian cultivar, a cross between Yellow Catuai and Obatã. Known for its high productivity and disease resistance, Arara offers a bright, clean acidity, remarkable sweetness, and complex flavors. Expect notes of fine nuts and orange, with a silky, rounded mouthfeel that has earned acclaim both in Brazil and beyond. Only perfectly ripe cherries were selected through careful harvesting and floating separation. The coffee then underwent a 72-hour anaerobic fermentation in stainless steel tanks. Every step, including pre-harvest Brix measurements, was meticulously managed to optimize flavor and quality. Renowned as the pioneer that introduced the Geisha variety to the world, La Esmeralda has long led the specialty coffee industry, earning countless international awards and becoming synonymous with Geisha itself. This lot was pre-dried on raised beds for three days, followed by a five-day fermentation in stainless steel anaerobic tanks inside a temperature-controlled room. In the cup, you’ll find bright aromas of bergamot and jasmine, with a silky texture and a long, elegant finish—a true expression of Esmeralda’s signature profile. - Tribute to Justin Boardman - 【Competition】 Panama Boquete Longboard Windy Ridge Recently, we received the sad news that Justin Boardman, owner of Long Board Coffee, has passed away. We would like to honor his passion and his way of living in harmony with nature by serving coffee from Long Board Estate during this special SCAJ period. Available exclusively at GLITCH TOKYO. Long Board is a small yet world-renowned farm located in Boquete, Chiriqui, Panama. Originally from California, Justin was captivated by Panama during a surf trip and moved there around 2000. In 2003, he began coffee production after acquiring land from Price Peterson of Esmeralda Estate. In 2011, he purchased higher-altitude land and has since focused on cultivating Geisha in three plots: Fennario, Misty Mountain, and Windy Ridge. This time, we are serving a Geisha from Windy Ridge. The area’s volcanic soil, high altitude, and unique climate — half the year shrouded in mist, the other half swept by wind — create ideal conditions for this variety. The process involves hand depulping, 24 hours of fermentation with wild yeast at low temperatures, one day of sun-drying on African beds, followed by 45 days of slow drying in a climate-controlled dark room. We invite you to share in this cup, nurtured in harmony with nature, as a tribute to the legacy of Justin Boardman. 先日、Long Board Coffeeのオーナー Justin Boardman 氏が逝去されました。彼の情熱と自然と共に歩む姿勢に深く敬意を表し、哀悼の意を込めて、彼が築き上げたLong Board農園のコーヒーをSCAJのこの特別な期間に合わせて提供いたします。提供はGLITCH TOKYO限定となります。 Long Board は、Panama Chiriqui県Boqueteに位置する小規模ながら世界的に評価の高い農園です。カリフォルニア出身のJustin氏は、サーフトリップで魅了されたPanamaに2000年頃移住し、2003年にEsmeralda農園のPrice Peterson氏から土地を譲り受けてコーヒー生産を開始。2011年には標高の高い土地を新たに取得し、現在は Fennario, Misty Mountain, Windy Ridge の3区画でGeishaを栽培しています。今回ご用意するのは、Windy Ridge のGeisha。標高の高さと火山性土壌、1年の半分は霧に包まれ、もう半分は風が吹き抜けるというユニークな気候が特徴です。手作業で果肉除去後、低温下で野生酵母による24時間発酵。その後、アフリカンベッドで1日天日乾燥し、気候管理された暗室で45日間じっくり乾燥を行います。自然と調和した環境で育まれた一杯を、ジャスティン氏への追悼と共にぜひ味わっていただければ幸いです。 -————— Panama Boquete Longboard Windy Ridge Variety : Geisha Altitude : 1600m Processing : Natural Tasting notes : Pomegranate, Grape Tea, Violet, Black Berry, Raisin, Long After

- New Beans Arrival - 【Hard To Find】 Colombia Cauca Hachi Project ROBA A rare and exceptional lot has arrived from the Hachi Project—a collaborative effort between two of the world’s top coffee producers: Allan Hartmann and Diego Bermudez of El Paraiso. The name Hachi comes from the Japanese word for “8,” symbolizing infinity and limitless potential. This project aims to redefine the future of coffee by fusing diverse regions, advanced techniques, tradition, and innovation. This lot, “ROBA,” features the Supremo variety, grown at Villa Esperanza in Cauca, Colombia. Selected from large-bean strains of the Colombia cultivar—a hybrid of Caturra and Timor—it offers a profile that’s both floral and fruity, with a juicy acidity and full-bodied richness. What truly sets this coffee apart is its Oxidative Process, a unique method developed within the Hachi Project. Unlike anaerobic fermentation, this process introduces high levels of oxygen under carefully controlled conditions—managing airflow, humidity, agitation, and enzyme activity—to encourage balanced aerobic fermentation and enzymatic oxidation. The result? A layered, wine-like depth with rich texture and a clean, vibrant acidity.
