Since ancient times, it has meant “right and harmonious movement” or “happy and balanced arrangement”, mainly in the field of fine arts and architecture. Its meaning is closed to harmony, but it’s implies the notion of movement, we use often this word to describe the beauty of a dancer’s gesture or the energy of the light in photography or painting. I do believe that it is appropriate to describe a dish, or at least the sensation of the eater. Also, one of the rules governing the act of cooking is non-negotiable: we must set ourselves a tone below the material we’re cooking, just imperceptibly helping it to exist, to take shape, listening and obeying to it. Here, I brought together the turnip and the cuttlefish, then thought of the « bland »to make them dialogue, and rather than enhancing them, I chose to sublimate their “gustatory silence”, to push them into their absence of noise, a naked dialogue of sorts. The turnip is poached in turnip water, while the cuttlefish is simply incised and poached à la minute in a squid broth. A clear cuttlefish jus, slightly enhanced with kasu sake and fermented butter, completes their bond. Spiny lobster cooked in its own coral, turnip and fukinoto purée, oyster émulsion, hasaku citrus fruit and the head flesh in kobujime ( inside the turnip roll ) and a paste made of old miso, curd cheese, honey and mustard ( hidden in center ) Her deep explanation is only is Japanese sorry, but that is brillant そして2050年、大人になる子供たちに贈る料理” 今から25年後の2050年、私たちはどんな世界で生きていたいのでしょうか。願う未来に向かうために、私はこの料理を贈ります。 2050年のこの世界はすべてのことが完璧になるわけではないけれど、作り手と食べ手の双方が生活と消費のあり方を見直した結果、物事はよりよくなっているとじています。 私が日本の食材の魅力に気づくきっかけとなったエビをメインにしたいと考えました。エビの中でも、持続性のある資源維持のやり方を長い歴史の中で守っている三重県の海女文化に着目しました。 日本の海岸の保護者である海女文化に触れるために実際に現地を訪れて、生きた伊勢海老を丸ごと炭火で焼いて食べた思い出を私なりの解釈で一皿にしました。海女になってよかったと笑う彼女たちの笑顔が未来にずっと続いて欲しいと願いを込めています。 はちみつはミツバチが地球上で果たしている重要な役割について、一次審査で私がこどもたちに伝えた食材です。その結果こどもたちがミツバチを守るようになり、2050年の未来には美味しい蜂蜜が地球上で栽培されて、その地域の生態系に数え切れないほどの恩恵をもたらしてることでしょう。 ふきのとうを使ったのは、お子様ランチで私が蒔いた自然を敬う心のタネが育ち、花が咲いたことを想像しました。山菜は健康な山で育ちます。私たち人間が意識を変えたことで山は徐々に再生していき、未来でもふきのとうをはじめとする山菜をいただけることを願っています。 豆腐や味噌は、日本の長い歴史の中で食べられてきた食材であり、未来にも絶対に欠かせない食材になると思っています。今の時代、比較的簡単に手に入る豆腐や味噌は食材本来の味が尊重されていないものも存在して、古くから伝わる伝統的な豆腐や味噌を大人になった彼らに改めて伝えたいと思いました。真の美味しさが広がることで、食生活が環境に与える影響をへらすことが可能になり、未来はよりいい世界になると思います。 もしも本当にまだ、2050年に私が今述べた食材たちを楽しめているとしたら、それは私たちの行いが未来を変えたということです。 人々がこの料理を食べられる未来があることを強く願います。2024/02/23に公開- 指定なし3.09%8718SOULS OF NOTO II Satomi is an Ama san 海女 As her mother and grand mother before her. She belongs to a community of fishery women who harmoniously preserve their traditions. Every day the Ama-San snorkel in the sea in search of algae, crustaceans and shells, which they use for food or trade. Luckily, during one of my visit in Noto our paths have crossed. She took me diving, with gentleness and patience, she taught me about the sea, its language, the biodiversity of its shores, she taught me to observe and move underwater. She also taught me about her life, her daily life, her traditions, her problems linked to the mutations of this world, but above all her joy and inner strength. She simply lives in her element, the water, she collects what the sea offers her and she knows how to listen to it. There is something of a perfect harmony that emerges from her daily life, a world that seems free of all forms of conflict and might be a possible representation of happiness, the natural finality of human life. With her mother, she sublimates all these gifts from the ocean in a small restaurant of their own ( @suzu_tsubaki.chaya_noto ) nestled high up on the coast, where the view is sublime and the calm so soothing that I would have loved to stay there for eternity. The earthquake heavily hit her village, her community, her life.
