Today, visitors can take various waterway tours around the Kanda and Sumida Rivers from a boat landing near Nihombashi. The Nihombashi itself is said to be decorated and stonework is arranged with an eye toward the view from the water. From the boat, visitors can trace the history of Nihombashi as a "water city" and enjoy views of Tokyo that they would not normally see. The Metropolitan Expressway, which runs just above the bridge, is currently being planned to be relocated underground. At the store, you can peek at the craftsmen carefully baking each additive-free article poured into a traditional mold. The standard item is "Ningyo-yaki Shichifukujin" filled with koshi-an (sweet red bean paste). The "Kastera-yaki Senji-yaki" was invented after the Russo-Japanese War when anko (red bean paste) became hard to obtain. The shop explained to us that the absence of anko (red bean paste) makes the kastera contain more sweetness. The concept is "Re-search, Re-spect, Re-construct," which means to research materials, pay respect to their makers, and reconstruct them. The studio is operated as an experimental site to shift the production method from "what to make" to "how to make" using what is already available.
