先日ジャックの大塚シェフに初めてお越し頂きました。 大塚シェフはオーボンビュータン、フランス.アルザスのジャックを経て1995年、福岡でジャックをオープンしました。その時に何度もお店に伺っていて、店頭で声を掛けさせて頂いたこともありました。 当時フランス、アルザスのジャックは、フォションのピエールエルメ氏やフェルベールさんと並んで僕にとって憧れであり、目指すべき終着点みたいな存在でした。 その名前を冠したお店が福岡にできたことに驚きと喜びを感じました。 だから僕にとってジャックの大塚シェフは憧れそのものなのです。 その大塚シェフが、僕の「クロワッサンの発想と組み立て」を読んで、食べてみたいと来店されました。 僕の狙ってるイメージを的確に理解されていて、とても嬉しく感じると同時に30年前の自分が鮮明に蘇ってきました。 当時の僕は、福岡のミレイユというパティスリーで働いていて、何をやっても上手くいかずに日々不安を感じながら働いてました。 クリームの絞りも出来ない、ナッペも下手、メレンゲも何度やってもバサバサになるし。 作業は慣れるしかないと分かっていたので、仕事が終わったらアパートに帰ってショートニングで絞りやナッペの練習をしてました。でも実際の生クリームとは固さや力加減がちがうので、月に一度給料を貰ったら問屋さんに行って1Lの生クリームを2本買って練習してました。 メレンゲはミレイユで卵白をもらって家で手立てしたり、仕事前の早朝の誰も来てない時にミキサーでメレンゲを立てる練習をしてました。 考えつく限りの出来ることは全てやって、それでもなかなか状況は変わらない日々に不安どころか絶望感すら感じる時もありました。 でも24時間お菓子の事を考える生活自体は充実していましたし、 そんな状況でも微かな光を感じさせてくれたのは、当時のシェフや先輩、周りの人達の励ましでした。 大塚シェフとお話をさせて頂いていたら、当時の自分の気持ちが沸々と湧き上がるように思い出されて、何かグッと込み上げてくるものがありました。 紆余曲折ありながらパン職人として独立し、本を出版させてもらった現在の状況を客観的に考えると、何やっても上手くいかなかった人間とは思えないほど、とてつもない成長だと自分でも思います。 ただそれはパンやお菓子の才能があったわけではなく、自分の意思で好きな事を夢中でやり続けたことがようやく結実し始めたのだと思います。 30年という年月を考えると決してタイパは良くありませんが、僕にとっては1分1秒も無駄にしてない30年なので、最短だと思います。
