上手に掘るコツは「時期×道具×向き」の3つだけ。 ✔︎ 旬は3月末〜5月上旬（関東は4月がピーク） ✔︎ 朝の収穫がベスト。日中は伸びてえぐみが増えやすい ✔︎ 専用の細身の鍬があると断然ラク ✔︎ 先端が向いている“伸びる側”から鍬を入れる 周りを掘りすぎなくてもOK。 赤い斑点の下を狙って、てこの原理でぐっと起こすのがポイントです。 そして何より大事なのが「掘ったらすぐ下処理」。
