【小暑】 二十四節気 第11。 7/7～7/21頃までを指します。 梅雨がそろそろ終わりを迎え、徐々に夏らしさを感じる頃。 梅雨が明けたと言っても、まだ雨の降る日もあり、集中豪雨が発生しやすい頃でもありますね。 田んぼの景色も、苗が成長して緑の絨毯のようです。 今年も産直売り場の棚に、地物の夏野菜が並び始めました。 珍しい野菜もあったりして、さて…どのようにして食べたらいいのかと、お店の方に聞いてから手に取るようにしています。 どれもおいしそうに見えて、つい買いすぎてしまうこともあります。 我が家の庭先の野菜たちはと言うと、ミニトマトが少しずつ実をつけ始めましたが、他の野菜はもう少し先のようです…。 少し前にスーパーで笹餅を見つけて、なんだか懐かしくなり手に取りました。 田植えが終わって少し過ぎたあたりで、田休みと言う風習があり、その頃によく笹餅を作りました。 2枚の笹の葉で餅を挟んだものと、あんこを入れて1枚の笹で包んだものを作ります。 作った笹餅は、ご近所や近くの親戚に届けたものです。 ほんのり香る笹の葉の香りと、懐かしい思い出と共にいただくとしますか…。 さて、今晩は何にしましょう。 . 【レモン香る トマトのライスサラダ】 ■材料 4～6個分 ---------------------------- ミディアムトマト ... 4～6個 きゅうり ... 20g 赤玉ねぎ ... 20g ズッキーニ ... 20g お好みの刺身 ... 30g A ご飯 ... 100g A ★さわやか 発酵塩レモンドレッシング... 小さじ2 ★さわやか 発酵塩レモンドレッシング... 大さじ1 ■作り方 ---------------------------- ① トマトのへたを1cmほど残して切り、トマトが転ばないように反対側も少し切る。 ② ①のトマトの淵に添って包丁の刃先で切り込みを入れ、スプーンで中身をくり抜く。 ③ きゅうり、赤玉ねぎ、ズッキーニ、お好みの刺身は5mm角に切り、★発酵塩レモンドレッシング（大さじ1）を加えて混ぜる。 ④ Aを混ぜ合わせ、③を加えて混ぜ、②のトマトに詰める。 【夏至】 二十四節気 第10。 6/21～7/6頃までを指します。 1年で最も昼が長く、夜が短くなる日です。 夏至を過ぎると徐々に夏らしくなっていきます。 田植えが終わり梅雨に入るあたりから、北信濃では根曲がり竹が旬を迎え、道の駅や産直売り場に並び始めます。 我が家でも以前は、朝から山に採りに行っていたことを思い出します。 山の中は竹藪で、最初はなかなか見つけられないのですが、徐々に目が慣れてくると面白いように採れはじめ、背負ったリュックと掛けている前掛けのポケットがいっぱいになります。 重たくなり、もういらないと思うのに、目の前にあるとつい手を伸ばしてしまうのです。 採ってきた根曲がり竹は、家に帰ってからも大変。 茶の間に新聞紙を広げ、皮むき大会の始まりです。 広げた根曲がり竹の山を見て、なんでこんなに採ってきちゃったかな～と思いつつも、はじめのうちはワイワイと話しながらむいていき、途中から無言になりひたすらむく。 そして気付くとすごい皮の量に…。 さて、どうやって食べるかと言うと、味噌汁にしていただくのが一般的です。 我が家では、鯖の水煮、豆腐、溶き卵を入れて作っていました。 各家庭によって入れる食材も違いますが、共通しているのは鯖の水煮で、淡白な根曲がり竹と鯖の脂がなんとも言えぬおいしさに仕上げてくれます。 なので、この時期になると鯖の水煮缶が良く売れるそうです。 根曲がり竹の味噌汁は、この頃になると一度は食べたくなるもののひとつ。 今年もそんな季節になりました。 さて、今晩は何にしましょう。 . 【今が旬！根曲がり竹の味噌汁】 ■材料 2～3人分 ---------------------------- 根曲がり竹 ... 300g 鯖の水煮缶 ... 1/2缶 豆腐 ... 100g 卵 ... 1個 ★久世福の信州田舎みそ ... 大さじ2 水 ... 500ml ■作り方 ---------------------------- ① 包丁で根曲がり竹の穂先を斜めに切り落とし、縦に切り込みを入れる。 ② ①の根本から切り込みを広げながら、穂先に向かってむく。 ③ ②を先端から5～6cmの所で切り、残りの部分は固い節を取り除いて食べやすい大きさに切る。（包丁を軽く当て、スッと通る所で切る） ④ 鍋に③を入れてさっと洗い、水を入れて蓋をし中火で③が柔らかくなるまで5分ほど煮る。 ⑤ 鯖の水煮缶、★信州田舎みそを入れ、軽く沸騰したら溶き卵を流し入れ、一口大に切った豆腐を入れる。
