Three varieties of grapes (Cheyenne Muscat, Nagano Purple, and Queen Rouge) with crushed walnuts are mixed with tofu and Gorgonzola cheese to make a white salad, and fermented pomegranate adds a reddish flavor. The classic "Takanome" is a sake with a fruity, pineapple-like aroma and a unique flavor that stands out only when served in a wine glass, setting it apart from other Japanese sakes. Takanome” has a more lively flavor and is more rounded in the mouth. This is probably due to the fact that it is Hiire. Takanome" is the same whether it is standard or fire-roasted, but it has an image of various flavors spreading evenly and softly in the mouth rather than having a prominent taste, even though it spreads roundly in the mouth at the first sip. In a good sense, it is flat and accepts the flavors of any dish. The reason why I chose tofu with tofu paste as a pairing dish is because it is an ingredient that accepts a variety of flavors in the same way.
