When we hear a hit song, it evokes memories of the time when it was popular, and even brings back the emotions and intentions we had back then. Similarly, our sense of taste is greatly influenced by "memories." Even within the same summer, Tokyo and Hokkaido exhibit starkly different characteristics. And as someone who has experienced summers in Europe and Central and South America, my "summer memories" drawer contains a wide range of miscellaneous recollections, without any real order. So, can a chef express their own memories through cuisine? Yes, I believe so. To translate and reconstruct fragments of memory and consciousness into ingredients, and then reconstruct them on a plate—this is the kind of work that I have recently come to strongly appreciate and love.
