木桶仕込み～ 【百年杉】の名前の由来 お酒造りに用いる木桶には、吉野杉の林業特有の密植と言われる方法で育てることで年輪幅が細かく均等になり、その条件が整った木材に育てるまで樹齢100年以上かかることが多く、その部材を活かして造られた木桶で醸したお酒であることから ”百年杉 木桶仕込み”と名付けております。 ✨ワインのように年度ごとの美味しさを楽しめるお酒✨ 酒蔵のお仕事紹介 vol.1 「洗米と浸漬」 現在は機械を用いて大量に洗米されることが多く１０kgずつの洗米は高級酒を造るときといわれます。 美吉野醸造の洗米はすべてのお酒が手作業を中心とした機械との共同作業で、１０kgずつ水圧を使い丁寧に洗われます。 美吉野醸造のお米はすべて奈良県の契約栽培米。 その生産者さんの農業スタイルや田んぼにより、同じ品種でもお米の状態が多種多様で大きく異なるので、細かく吸水率を調整しながら限定吸水を行っています。 その為、生産者ごとのお米の状態を見極め最適な吸水率を導き出すには、大量の洗米ではなく少量洗米が大切になります。 きゅうりがたくさん採れる季節がやってきました🥒 酒粕できゅうりといえば奈良漬が有名ですが、今日はもう少し簡単にできる酒粕で作るお漬物のご紹介です。 こちらは蔵人のお母様から教えていただいたレシピです✨ キュウリ1本を丸ごと塩で軽く揉んで水気を拭き取ります。 熟成酒粕で包んでラップを巻き冷蔵庫で4日ほど寝かせれば浅漬け風に。
