林業が盛んで良質な杉材に恵まれている吉野。 その杉材で多くの樽や桶が作られました。 山を守る「山守」、木を用途によって切り分ける「製材所」、樽のための部材を削る「樽丸」そしてそれを利用して酒を造る「醸造所」。 これらの技術があって作る事のできるお酒があります。 吉野地域の植林は古くは室町時代から行われていたとされ、江戸時代にはより良い酒樽や酒桶の部材を作る為に密植という植林方法を開発してきた歴史があります。 年輪が密であるほど中の酒は漏れにくく輸送に適しています。しかしその条件が整った木材に育てるまで樹齢が100年以上かかります。 密植させて生育をコントロールする吉野林業の技術を駆使したとしても、木という自然の中で育まれることにより生じる、滲み出るような不可避な差異があります。 その差異すらも、樽丸業という加工技術により、原木の中から目利き選別を施して木を活かしていくことで、この花巴“樽丸”のお酒には必要不可欠な雰囲気の統一感を持たせることが出来るのだと思います。 花巴で実現したい酒造りもまさにこのような味わいです。 ちなみに「樽丸」とは本来、樽の側板のことを言います。 樽丸は杉を手作業で削り加工されていきます。 樽や桶には釘や接着剤などは一切使われず、木にあけられた穴にピタリとはまる様に作られた竹釘を刺し、木と木を合わせていきます。 周りは“竹のタガ“でしっかりと固定されていますが、このタガを外すと一気にバラバラになります。 余談ですがよく使われる「タガが外れる」の語源でもあります。 半製品でありながら吉野で作られる樽丸は見事なほど隙間なく美しく仕上げれ、そのような樽丸(側板)は「正直」と表現されたそうです。 「正直」と「正直」が組み合わされ作られる「樽丸」 そこに吉野の風土に寄り添い醸された美吉野醸造のお酒が貯蔵され、江戸時代に樽廻船で運ばれた1週間～10日を再現した時間を樽の中で過ごします。 長い時を経ても変わらないまっすぐに育った吉野杉の優しい香りを纏い、“花巴 この時期はスーパーなどでも梅や保存容器がたくさんならんでいますね。 ただ今美吉野醸造では梅酒を漬けるための日本酒 “花巴 育てる日本酒 “を販売中です。 以前の投稿でもお話しましたが、梅だけでなく様々な果実も漬けることが出来ます。 6月に入ると3回にわたり皆さまと梅酒を漬け、梅酒を楽しむ美吉野醸造ワークショップも開かれます。 ちょっと気が早いですが今日はその漬け込まれた「梅」の活用レシピをご紹介✨ 梅酒を漬けると当然たくさんの「梅酒の梅の実」ができます。 このまま口に運んでも、冷凍して冷たいヘルシーなおやつにもなりますが、アルコールが気になる方に簡単にできる「梅の甘露煮」はいかがでしょうか？ 元々の梅酒の梅の実の甘さもありますので、今回はお砂糖控えめに作ってみましたが十分な甘味がありました。 詳しいレシピは画像をご覧ください😊 昔から箸休めに、お茶請けにと重宝されてきた梅の甘露煮。 冬に買った酒粕。冷蔵庫などにまだいませんか？ そんな酒粕を使って今日は簡単につくれる“酒饅頭“をご紹介。 今回は市販のつぶあんで作りました。お好きなあんでお試しください♩ 丸めるのが手間なので開いた生地にスプーンで盛モリ。丸めれば出来上がり。 切ったクッキングシートに乗せて膨らむので間をあけて蒸していきます。 花巴 育てる日本酒で作った自家製果実酒ができました🙌 今回は苺に甘夏、キウイにレモンとちょうどなっていた旬の山椒の葉を漬けてチャレンジした花巴果実酒第1弾🎉 果実酒というと数ヶ月はつけないといけない、と思っていましたがこの花巴育てる日本酒は3日目～美味しくいただくことができました✨ 3日～5日で果実や葉は出しました。 正直な感想としましては…めちゃくちゃ美味しい‼️果実からくる甘味を計算に入れず作ってしまったので少し甘くなりましたが、口に含んだ瞬間にはしっかりと花巴らしさを感じる旨みと酸を残しつつ果実の特徴も活きたとても飲みやすく美味しい果実酒が簡単にできました。 意外にも1番人気だったのが「山椒酒(木の芽酒)」 山椒の香りがあと口に爽やかで焼肉などに合いそうです( 'ч' )
