通常梅酒作りでよく使われるホワイトリカーと日本酒（育てる日本酒）で漬けるのでは何が違うのか🤔⁇ まず一つ目はホワイトリカー(Alc.35)で作るより低いアルコール度数のお酒になります。 気軽に楽しめますね♪ そして「花巴育てる日本酒」は奈良県産米のみを蔵に棲んでいる自然のパワフルな酵母で発酵させ造られる純米酒ですので、アルコール度数２０%を超える濃厚な日本酒になります。 酸を開放する酒造りならではの花巴のもつ乳酸の表現を活かし、果実の酸と調和した個性のある果実酒をご家庭でぜひ育ててみてください。 ⭐️分量は瓶の大きさなどにより異なります。甘みなどお好みで調節してください⭐️ 【 基本の花巴育てる日本酒でつくる梅酒 】 2リットル瓶使用 【 材料 】 ・花巴育てる日本酒 900ml ・梅の実 500g ・てんさい糖 350~500g（お好みで） 【 作り方 】 ・洗浄、消毒し良く乾かした瓶を用意。 ・梅をきれいに水洗いし十分水気を拭き取り、つまようじなどでヘタを取る。 ・瓶に梅→育てる日本酒→てんさい糖の順でいれる。 ・蓋をして冷暗所で保存（6か月～） 最初の1週間は1日1回瓶を振って混ぜる。（梅が沈むまで） 密封できる瓶であればお好きな大きさのもので作ることが出来ます。小瓶であれば早く出来上がるのかもしれません。 昨年はいちご酒、オレンジ酒、山椒酒、レモン酒、キウイ酒、メロン酒などにチャレンジしました🙌 ※すべて洗浄消毒し良く乾かした清潔な密閉できる瓶で行います。 400mlの小瓶でつくる 『 🍓いちご酒 』 花巴育てる日本酒 200ml 洗いヘタを取り水気を拭いた苺 100g グラニュー糖 20~30g いちご→グラニュー糖→育てる日本酒の順で入れます。 いちごが浮き上がるので毎日軽くふり冷暗所で保存。 3日～1週間（3、4日で崩れる前に果実は出しました。） いちごの甘さがでるのでお砂糖はひかえめに。お好みでどうぞ。 小さな瓶で作るので3日ほどでお酒が鮮やかな赤に染まりました。 いちごの味はお酒にすべて出たのか果実に味はなくなっていました。 『🌿山椒酒』 花巴育てる日本酒 200ml 良く洗いしっかりと水気を拭いた山椒の葉 40~50g グラニュー糖 20g 3日目くらいからしっかりと山椒のスパイシーな香りがお酒についてきます。 スパイシーな香りを活かすため甘みは抑えめに（お好みでどうぞ） 1週間くらいから。炭酸やレモン酒と割っても美味しくいただけます。 200mlの小瓶でつくる 『🍈メロン酒』 花巴育てる日本酒 82ml カットメロン 52g グラニュー糖 3g 3日ほどで果実が崩れてきたので出しました。 200g (画像では200gの小豆に甘酒を1本使いました。 【 作り方 】 ✿小豆を水でさっと洗う ✿鍋にたっぷりの水を入れ小豆を煮る。沸騰したら水を捨てる(ゆでこぼし) ✿再度お鍋にたっぷりの水、小豆を戻し小豆が芯まで柔らかくなるまでコトコト煮る。(水が減ったら足して小豆が出ないようにしてください。) ✿柔らかくなった小豆をザルにあげ水を切る。(水を切らないと水っぽくなります。)
