However, this sake is super clear and smooth! When you drink it, you will taste a mild sweetness, subtle bitterness, and then fresh acidity. It becomes clearer when you drink it cold, but I also recommend you drink it at hot temperatures! The chief brewer, Miki Fujioka, was already a hit maker. It’s a very fresh, subtle, bubbly sake! Akabu has many series, but the sword behind the letters “Akabu” means it is unpasteurized sake. You will smell a sweet fruity aroma like melon, but you will taste a thicker, yet mild sweetness similar to apricot when you drink it. The sweetness is strong at first, but then the umami comes out and makes the whole drinking experience great. Banshu ikkon is a famous sake by a brewery that started over 170 years ago, but this shippou series just started last year after the whole brewery was burned down. You will smell the aroma similar to cantaloupe🍈 and find the fresh sparklingness. When you drink it, you will find the comfortable smell of rice and delicious sweetness and bitterness. The lovely bitterness goes well with many dishes! It tastes light because of a lower 13% alcohol percentage (average 15%) and 50% “omachi” sake rice polishing. I love the subtle aroma similar to pineapple, well-balanced sweet sour taste, and great bitter finishing. The flower, kisuisen🌼 (yellow daffodils), means “come back to me” in Japanese. There is the blue label of honjozo and the red label of junmai daiginjo, and I recommend this blue label because it has a powerful umami. You must try it because you can truly feel the pure taste of Hakkaisan. Well-balanced, mild and no unpleasant aftertaste. Please enjoy it as you eat. The brewery is very small, but it’s well known throughout Japan. There is a lovely melon scent and a deep umami taste from rice as you drink it. Very fresh yet not intense, a little bubbly.
