This sake, genshu, which means undiluted sake, should reach around 18%, but it has only 13%. This is thanks to the sake makers’ control techniques. A refreshing scent like banana comes out, and immediately you can find the deep umami. It’s very smooth, so be careful not to drink too much! Some low-alcohol sakes are too soft and indistinct, but this sake has a mild yet rich rice flavor. When you open the bottle, you will find a nose filled with white grapes. The alcohol percentage is just 13%, but the taste is rich and softly sweet. The elements of sourness and bitterness are well-balanced, which makes it very easy and smooth to drink. It contains a beautiful deeper umami. Try this sake with a pinch of salt! You can find that the sweetness and fruitiness expands in your mouth! More intensely sour when you drink it by itself, but the sweetness stretches when you drink it with salt. The gentle aroma of sweet fruit like apples and melon comes out when you open a bottle. You will taste the light sweetness and sourness, and then a wonderful umami follows, but no lingering aftertaste. This sake won grand gold medals in the Kanzake (hot sake) award in 2020 and the fine sake award in 2019 in Japan, which means it tastes amazing at both cold and hot temperatures. What I personally want to recommend is Kanzamashi, which means you heat a sake to 50℃ but rest it to cool down to 40-45℃. The taste becomes sweeter and mider.
