「おいしい」という感覚は、料理はもちろんですが、店主やスタッフの人たち、空間も音楽も、素材も、それに物語も、さまざまなものから生み出されています。 小野城碁さん理恵子さんご夫婦が〈GRIS〉を開いたのは2014年3月のこと。最初のころは酒場をイメージして燗酒とアラカルトの料理から始めたが、自分たちが思っていた雰囲気とやりたい料理、それとお客さんとがしっくりきていないことを感じるようになりました。城碁さんの手間をかけた料理を生かしきれていないと考えた理恵子さんは、それを改善するためのアイディアを出していきます。2人が作りたかったのは、ここに来た人にとって居心地がいいと思ってもらえるような場。ゆったりとしたなかでの食事の時間。料理があって、音楽に耳を傾けられるような居心地のいい空間でした。 指定なし0.59%1790東京で生まれ育った渡邊亜希子さんは、医療用のメスや刃物などの研磨工の仕事をしていた祖父母の自宅兼工房を時おり母と一緒に訪ねていたので、職人が仕事をしている様子は子供のときから身近なものだった。大人になり京都を旅したときに、職人の手仕事を見る機会があって、いずれは京都に住んでみたいという想いを持つようになり、2007年、28歳のころ京都に移住した。当初はお店を持つことは考えていなかったが、若手の職人との出会いや活動を通じて、2009年に〈工藝百職〉というお店を京都市内に開き、その2年後に移転するときに現在の〈テノナル工藝百職〉（@tenonaru_kougeihyakushoku）とした。建物の契約の関係で2020年に神戸へ移転、そしてパートナーとの出会いから、再び京都に移転オープンした。道路から少し奥まった路地の先にある一軒の町家。お客さんにゆっくりとした気持ちでものを見てもらいたいと縁側に案内してお茶を出すことも多い。長い時を刻んできた建物の佇まいのなかで手仕事のものが息吹いている。 Akiko Watanabe grew up in Tokyo seeing craftsmen work as she and her mother sometimes visited her grandparents, whose work was to polish surgical knives and other blades. When she went on a trip to Kyoto, she had a chance to have a look at craftman’s handwork, leading her to think she would like to live in Kyoto some day. Then she moved to Kyoto in 2007 at the age of 28. In the beginning, she didn’t think of running a store herself, but over the course of getting to know young craftsmen and working with them, she opened a store〈Kougeihyakushoku〉, or “crafts 100 works” to translate literally, in 2009 in Kyoto, and 2 years later relocated it as the current name〈Tenonaru Kougeihyakushoku〉. Due to the contract of the building, she moved to Kobe for some time, but is back in Kyoto again with her partner. Her shop is situated in a traditional house at the end of an alley. She often leads her guests to the veranda-like deck facing the outside to have a cup of tea because she wants them to get relaxed and take their time to look at products. The handmade items appear lively in the long-standing house. Mayumi Yoshida, who runs a store〈sabita〉in Sapporo, Japan, was drawn to a tableware she came across in a women’s magazine. The pottery had curved distortion unlike tablewares she used to know, which were round with no distortion. She learned that it was made by Masanobu Ando, and she wanted to visit the place it was born. Afterwards she made up her mind to open a store to sell Ando’s works and started 〈sabita〉20 years ago. She has stayed in contact with Ando since then. If you pick up a tool and feel right, try using it and you can develop the tool itself as well as how to use it. The important thing is that you try and figure out how you want to use it. » To imagine how he wants to use a tableware and to tell that in the way that evokes the senses - that’s one of the things he finds meaningful and rewarding in his work. IN THE GOODS.〉（@lifeinthegoods）を2014年にオープンさせた。 限りなく装飾を削ぎ落とした空間には、陶磁器、ガラス、木といった素材の手仕事のものがゆとりを持って配置されている。大きく２面に渡って開かれた窓からは柔らかな自然光が手仕事の道具たちの表情を浮かび上がらせる。そして窓からは福岡城の周りにある四季折々の街の木々、人々の行き交う姿を眺めることができる。 そこから仕事を作り出そう。 菊本拓志（ひろし）さんは山口県山口市で〈薪窯パン 菊本〉（@kikumoto_panya）の屋号でパン屋を営む。 作るのはカンパーニュの1種類のみ、国産のオーガニックの小麦を使い体に優しいパン作りと自分たちらしい生活スタイルを考えてのことだ。 朝5時から生地をこね始め、パンを焼き、13時過ぎに片付けまで終える。そして妻である明日子さんと昼食を食べ、子供を迎えに行く。 以前、銀行で勤めていた菊本さんは、自分と家族の幸せを考えて今の営みを始めることにした。 Let’s start from thinking about how we want to live. Then create a job that goes well with our lifestyle. Hiroshi Kikumoto runs a bakery called 〈Makigama-pan Kikumoto〉in Yamaguchi prefecture, Japan. Makigama-pan means bread baked with a wood-fired oven. He only makes pain de campagne, or “country bread.” He decided to do so because he wanted to bake body-friendly bread using domestic organic flour as well as make time with his family. He starts his work at 5 am, kneads the dough, bakes bread, and finishes all his work by a little past 1 pm. He has lunch with his wife Asuko and goes to pick up his child. He changed his work from a banker to a baker in pursuit of happiness of his family and his own. For the exhibitions she picks up tools that would make everyday life of eating, clothing and housing comfortable and enjoyable. She had long been a housewife and has become able to identify tools which she truly thinks are good as she uses them herself. Her hope is to pass on those tools to the younger generations and to connect them to good creaters. The 180-year-old house reside in peaceful countryside with a lot of permission trees. Yuka Yoshino, the owner of the store, became interested in tableware when she was in elementary school. She was fascinated with the beauty of a white porcelain plate with green color in the middle, which she came across in a magazine. Since then she was fond of tableware and finally opened her store〈Umi to Tsuki to〉at the age of 52. She had worked for a hospital for a long time. What supported her in those days of hard work was the times when she had tea with her favorite mug at home and thought about what to eat with which tableware for the day. The pleasure of using tableware was so important for her in everday life. )が移転オープンしたのは2022年の11月。そこには〈みずうみ喫茶室〉（@mizuumi_kissashitsu）を併設した。かつて田原さんがこの場所で「また頑張ろう」と思えたように、誰もが気持ちを転換するようなときに立ち寄ってもらいたいのと、米子に心落ち着く場所があることを知ってもらいたかった。 身の回りの道具が普段の自分にどのようにつながるのでしょう。この特集を通して、私たち編集者もその問いを持ちながら取材を重ねました。 奈良市、春日大社にほど近い住宅地の奥に佇む〈空櫁〉（@soramitsu_12）。細い小道の先、笹垣のある平屋。五井あすかさんは日本の古い家屋でお店をやりたいという想いがあってこの場所と出会った。 会社員だった20代のころの五井さんは、100円均一などの生活雑貨を使って日々を過ごしていたことがあった。転機となったのは、職人が作った箒。それを使うことでその職人との会話が思い出された。それからはものが作られている背景や作っている人のことを考えるようになった。 「もの」と「ものを使うこと」の間に自分がいる。 Photo Masaya Yoneda Some people would get one for the new year, and others use it habitually and buy it repeatedly. In the first place, the reason why we thought of making “Notebook of life” is… I myself used to have notebooks of blank white paper to write down my thoughts rather than planners you are meant to renew each year or diaries. It’s because that kind of notebooks allowed me to write whenever I want and as much as I want. I was free to write vertically, horizontally or diagonally, or draw some pictures. As my notebooks amounted to several, however, I started to have trouble finding what I wanted to look back because I had written too freely. “We all are on the way of our life”. In the journey of my life, I write down what I’m thinking at each moment, and there are times I look back and check “what was I thinking back then?” or “those words at that moment encouraged me”. I wanted to have clues for the writings as well as not to forget what I had in my mind as my goals or wishes at each moment of my life. “Notebook of life” is created based on the idea of planting seeds of “word” “things” and “imagination” so that you can write down your current thoughts and feelings, your words, where you are at the present moment.
