Moromi was bottled together to give the sake the aromatic flavour of moromi, which is fragrant aroma in the brewery during the winter brewing season. This sake is brewed with Kame-no-o, a native variety of rice grown without the use of pesticides and chemical fertilisers in our own fields and contracted farmers, and brewed with the bacterias inhabiting our brewery. This season's Shibotttamanma has a crisp and dignified impression. The aroma is like white grapes. You can enjoy the acidity and umami from Kimoto method. In the cold season, drinking it warm will extend its flavor and allow it to softly fill your body. This time, he repaired and made new vats for the half-sliced vats used for Motosuri, to blend Koji, steamed rice and water well. Seto, a brewer, joined and made the bamboo tag, side wooden panels, and bottom wooden panels with Mr.Ito’s instructions. After repeated adjustments such as a size of the bamboo tag and the degree of shaving of the wooden panels, a vats was made that did not leak water. The wood was taken from the same tree as the wooden vats which was assembled at Okura Festa.
