This time, he repaired and made new vats for the half-sliced vats used for Motosuri, to blend Koji, steamed rice and water well. Seto, a brewer, joined and made the bamboo tag, side wooden panels, and bottom wooden panels with Mr.Ito’s instructions. After repeated adjustments such as a size of the bamboo tag and the degree of shaving of the wooden panels, a vats was made that did not leak water. The wood was taken from the same tree as the wooden vats which was assembled at Okura Festa. 香取生原酒は、生酛造りが確立した江戸時代にならって、化学肥料や農薬を使わない生命力溢れる土壌で育てられたお米をあまり磨かず、精米歩合８０～９０％と低く搗いています。低精白のお米は、ミネラルやタンパク質など栄養価が高く、蔵に棲みつく微生物たちが元気に発酵します。 自然発酵由来の豊かな穀物の香り、濃密で力強い旨味、乳酸の酸味が特徴の生原酒です。
