It has understandably been a difficult and uncertain past year for us all, and I wish I was reaching out to you all under better circumstances, but as many of you may already be aware, we were saddened to announce the sudden and unexpected closure of Inua in April last year. Furthermore, since then and in more recent months, I have suffered the devastating loss of my father and another close relative, and ultimately for this reason, I have made the decision to leave Japan and return to Europe to be closer to home, in order to support my mother and family. I would like to end here by thanking each and every one of you for making Inua a very very special place and I look forward to returning to Japan someday in the future. I am forever grateful and appreciative to have worked with, welcomed in and met so many great people during my short time in Japan. Showcasing a collection of personally selected brewers and styles they’ve tried and tested (and most importantly enjoyed!) during their many visits to Japan (@richiehawtin also being awarded the prestigious title of Sake Samurai in 2014 by the Japan Sake Brewers Association), this venture is arguably one of the most authentic exhibitions of bespoke sake outside of Japan. During that time, and like many in our community, we have faced challenges that we have never seen before. We have faced them together and with a united spirit and sense of purpose. However, with the continued uncertainty being faced by our industry and community, both here in Tokyo and around the world, I wanted to share with you that we have decided that Inua will continue to remain closed. As difficult as this decision is, with the wellbeing of our team and guests at the heart of everything we do, it is the only decision we can take. Beyond that, we know that restarting the local and international economy will take time, and recovery will take even longer. Remaining closed for now will give us the best chance of returning again in the future. Shoma from Hokkaido. Arguably the proudest member of our team, with his flamboyant nature shining through at any opportunity to advocate Hokkaido, whether it be produce, culture, or traditions. Although time in isolation has given him less opportunities to do so, it still hasn’t stopped him from shooting goals. Recently he married his childhood sweetheart, who of course, is also from Hokkaido! Wishing them all the best from the entire team! Chris coming all the way from Virginia in the U.S, however has been living in Japan long before INUA came into existence. A great source of foreigner-friendly first-hand knowledge, especially with a lot of us (still) very much lost in the cultural jungle that is Tokyo. He’s been staying quite low key in recent times, but enjoys long scenic bike rides to pass the time whilst getting a good amount of exercise. Kunino from Tokyo, her hometown located on the Nikkō Kaidō, one of five historic highways that was constructed during the rise of the Edo, the former capital of Japan. She’s been a great help translating and transcribing our daily zoom presentations, no small feat considering some submissions are over 9 pages long! When she’s not busy at the desk, she’s spending more time than ever in the kitchen and on the yoga mat. Also started a herb garden on her balcony at the beginning of isolation, and now has more herbs than she knows what to do with!2020/06/01に公開INUA 日本 東京都1.26%8721青梅にあるお豆腐屋さんのご主人、大久保さん。 大久保さんには、開業前から一緒に試行錯誤して限界に挑戦していただき、豆乳をカスタマイズしていただきました。INUAのスタッフも、何度か早朝にお邪魔して、豆腐作りを体験させていただいています。毎日変化する温度、湿度に対応して、豆の水の浸す時間、蒸す時間と温度、水の量を感覚で細かく調整されている大久保さんの職人技。また、大久保さんの「毎日真剣勝負で豆腐作りに挑んでいる。」という言葉に、皆が感銘を受けました。 大豆本来の香りを最大限残すために、ぎりぎりまで加水量を抑えていただいた、濃厚で風味豊かな豆乳は、INUAの料理の幅を広げるのになくてはならないアイテムです。 A small tofu factory located in the western outskirts of Tokyo, run by a gentleman by the name of Ōkubo-san. We were privileged enough to work with him closely during the developmental stages of opening INUA, customising our own specifications to produce the soy milk we use in the restaurant. A number of us have made the trip out to the factory to be shown and taught the way he goes about his craft every day. Daily adjustments to soaking and steaming time, temperature, and ratio of bean to water, accommodating for the fluctuation of the humidity and temperature of the environment throughout the year. He attributes the rich texture and flavour of the product to using the absolute minimum amount of water required to produce the milk, a process that prioritises quality over quantity in every sense. Wild beach roses called Hamanasu, an aromatic flower that blooms different shades of pink during summer, and is also the official flower of Hokkaido prefecture. We blend and infuse the petals of the flower with oil to produce rose oil, then we use the sediment, still full with flavour, to make our rose kombucha. Earlier this month, @rockpooldininggroup in Australia launched a community meal campaign in Sydney and Melbourne to provide nourishing meals for those in need. Of course the homeless and disadvantaged during the pandemic, but also for international hospitality workers that have had unemployment forced onto them without inclusion in the nation’s economic safety net during these trying times. A fun day in the sun alongside industry friends @hiroyukkanda, @team.ishikawa, and @satoyamajujo (just to name a few!), followed by a feast in the forest hosted by Keiko and the team at Satoyama Jūjō. Sad to have missed out this year, but we’re already looking forward to next year! #inua #inuajp2020/05/27に公開Niigata Prefecture 日本 新潟県https://www.instagram.com/explore/tags/inua#inuahttps://www.instagram.com/explore/tags/inuajp#inuajp1.12%7725今週は、ミオ、アンネ、ワタルをご紹介します！ リサーチ・購買チームの3人目、そして最後のメンバーである茨城県出身のミオ。 日本の農産物と農家に対する誰にも負けない愛を持っており、私たちINUAを支える重要な生産者とサポーターの方の多くは、ミオを通して紹介されました。 その他にも全国の隠れた名店にも詳しいので、Covid-19が終結したら、何人かのメンバーはおいしいお酒と外食を求めてこのエキスパートの元に走るでしょう！ オランダ出身のアンネは経済学のバックグラウンドを持ってINUAに来てくれました。 料理への愛と誠実に向き合う姿勢で、彼女はすぐに私たちのチームに慣れました。彼女は自粛期間中も色々な課題に取り組んでおり、本格的なヨガ、自家製サワードーや美味しそうなジンジャービアを作ったりと、忙しくしています。 ランニングを始めたメンバー同士で比べて見ると、おそらく彼女の、夕日とスカイツリーを背景にした隅田川沿いのルートは最もうらやましいものでしょう！ 長崎県沖の594の島の1つから来たワタルは、アップルサイダービネガー、アマナツビネガー、ザワークラウトなど、彼独自の発酵プロジェクトを行っています！ 彼は、レストランから離れている間も、高校の時の英語の教科書をひっぱり出して、できるだけ多くの英語に日常的に接するようにしています。いくつかの海外映画は日本語の字幕つきで聞く方が簡単なので、たまにはそうすることもあると彼は白状していました。 This week we have Mio, Anne and Wataru! Mio from Ibaraki, the third and final member of the research and purchasing team. Her love for Japanese farmers and produce is second to none, with many of our most valued suppliers and supporters being friends introduced to INUA through Mio. The go-to person for advice on many hidden gems around the country, we’re sure a few guys on the team will be asking her for some tasty tips on food and drink once we reach the tail-end of Covid-19. Anne from the Netherlands came to us with a background of economic science. Her love for food and conscientious approach to life in the kitchen quickly brought her up to speed within our team. She’s been keeping quite busy with her own isolation projects involving extensive yoga sessions, home-made sourdough and a delicious looking ginger beer. She probably also has the most scenic run route out of all of us, a round along the Sumida River on the east side of Tokyo with the sunset and Skytree in the background! Wataru from 1 of 594 islands off mainland Nagasaki, has his own fermentation projects on the go including apple cider vinegar, amanatsu vinegar, and sauerkraut too! He’s pulled out his English textbooks from high school to make sure he’s still getting daily exposure to as much English as possible while being away from the restaurant. They both met Thomas in January this year when he was invited as a guest speaker at the Basque Culinary Centre to talk about his experience in Japan and the food culture that has shaped INUA. ーーーーーーーーーーーーーーーーーーー Gonzalo from Ezcaray, Spain -“I came to Japan to get to know the culture; I also really liked how they worked in the restaurant. When I had the chance to come here to do the final project, it was an opportunity I had to take. My project is based on doing an analysis on a restaurant's carbon footprint, specifically in the beverage department. Together with my college classmate Pablo, we will be at INUA for four months. Despite these unfortunate times in the world, I spend my days cooking and working on the project, which involves a lot of reading on the subject.” ーーーーーーーーーーーーーーーーPablo from Cuenca, Spain -“I came to Japan because I felt that it could be a once-in-a-lifetime opportunity. I also felt really attracted to the INUA's concept and the Japanese culture, so I thought it would be a perfect environment for the development of my final project. My project is based on the analysis of Phaeophyceae, one of the three major groups of edible (brown) seaweed that is available in Japan and the amino acid composition of them. The menu that we received left plenty for the imagination, so imagine we did! We gathered a combination of ingredients never before seen in our restaurant, from suckling pig to plantain and everything in between. Thoughtfully named our menu “Caribbean in the Heart of Tokyo”, this theme became very much our main source of inspiration when it came to flavours and execution. An event that normally involves over 100 chefs travelling around the globe to cook their menus in a foreign country. Last year however, a slight twist entailed where the chefs stayed in their own restaurants and exchanged their menus and recipes instead. The conditions were that the submitted menu mustn’t have ever been served in the restaurant before, but the dishes must be tried (maybe not tested!) with recipes of how to execute each from start to finish. Here are just a few dishes that @thomasfrebel and the INUA test kitchen dreamt up to have appropriated in a kitchen far, far away. It is fair to say that this was definitely a collaboration that we had been looking forward too for quite some time, and we were left completely wow’d by the big deep flavours and bold heat of the West African ingredients and produce we came across. A fast paced, one-day pop-up which can only be described as “Japan meets Scandinavia meets West Africa meets Britain” was short, sweet and very inspiring. A massive thank you again to Jeremy, Ire and the team for taking such wonderful care of us, we look forward to doing something again with you in the near future!
