Our Pilgrim's Respite beers are an homage to the beer style that we perhaps love the most, the saison. Unlike our more modern Ichigo Ichie, our year-round beer, our Pilgrim's Respite beers are more focused on making saisons in line with Belgian tradition, and this particular edition is neither a table saison or a strong saison, but a true focus on the original classic. Another element of this series is our refermentation in the package, bringing an extra high carbonation, and helping the beer to mature better over time. While we still think drinking this style out of a champagne bottle is the best experience you can get, we also did a limited canning run this time, also fermented in package. Inspired by the West Coast IPA that took America and then the world by storm, we went for the same solid malt base and clean yeast character, along with a heavy hop load that was really the hallmark of what caught people's attention, but brought it forward slightly with current tropical hops. This edition focuses on the West Coast IPA that really kicked off the growth of craft beer 20 years back with its high impact bitterness and intense citrus character. Using classic fruity and resiny notes, we went for a similar hop profile, while keeping the dryness more prevelant in modern IPAs to balance well the old and the new. The last in this series was the original old American IPA, focused on lots of cascade hops. This time around, the beer is based on the next step in the style's evolution, the West Coast IPA, that came out of California. If the emergence of cascade hops got the ball rolling, the arrival of the West Coast IPA was what really took a wrecking ball to the beer industry, as breweries started to compete to make the hoppiest and most impactful beers that they could. It’ll be shipping out from tomorrow to bars around the country. This time we made a refreshing and juicy session IPA that pairs well with poultry. Instead of a really strong hop character, we looked to combine varieties to give nicely balanced citrus notes to make the beer easy to enjoy with food. We also kept the ABV low at 4.5% to ensure you can continue enjoying the drink throughout and even beyond your meal. By all means, head on over to your local watering hole and tell us if you agree. The naming of the beer came from one of our customers, bigliquy_yuuhigaoka.2023/05/31に公開- 指定なし1.55%2820<English is below> 実は私たちは先日、樽洗浄機と樽詰め機の両方が故障してしまうトラブルに見舞われました。メーカーに問い合わせると修理に3週間は掛かるとのこと。 困った私たちが、同じく京都でブリュワリーを営む家守堂(@yamorido)とウッドミルブルワリー(@woodmillbrewery.kyoto)に相談したところ、彼らからの返答はこうでした。「では、僕たちの洗浄機を使うのはどうですか？」 私たちは修理が完了するまでの間、お言葉に甘えることにしました。彼らは(いうまでもなく)忙しいにもかかわらず、「私たちの生産スケジュールに影響を与えないように」と、時には夜遅くまで洗浄機を使える時間を作ってくれました。 今回、私たちに力を貸してくれた白樹さん、辻本さん、本当にありがとうございました。 私たちはだの同業他社というわけではなく、困ったときには助け合う「仲間」なのだと実感しました。そしてまた、この「仲間意識」に惹かれて今日まで歩んできたことを思い出した出来事でした。 お客様へ：次、京都醸造のビールを飲む時に、こうした仲間の助けがあってようやく目の前のグラスにたどり着いたビールなのだと想いを馳せつつ乾杯して楽しんでもらえたら幸いです！ If you have spoken to someone in the brewing industry before, you have probably heard them talk about how they were attracted to it by the people and camaraderie within it. We were blessed with both recently when our keg washer/filler broke suddenly. With little hope on hand, we reached out to our neighbors in Kyoto: Yamorido and Woodmill Brewery. With zero hesitation, they welcomed us to borrow their keg washers, giving us a lifeline until our machine can be fixed. Despite their own busy schedules and their own need to wash kegs, they made time for us even until late in the evening so that our production schedule would not be impacted. I struggle to think of another industry where one could call a competitor or rival and have them extend a hand in goodwill so that we can benefit from something that they themselves do not receive any particular benefit from. We are happy to be able to call Shiraki-san and Tsujimoto-san not just industry compatriots but also friends--thank you both so much!
