Then finally I tried roasting in my flat by myself today. ・ ・ #焼鴨 #焼味 #港式焼鴨 #roastduck #chinese #cantonese2025/04/07に公開- 指定なしhttps://www.instagram.com/explore/tags/焼鴨#焼鴨https://www.instagram.com/explore/tags/焼味#焼味https://www.instagram.com/explore/tags/港式焼鴨#港式焼鴨https://www.instagram.com/explore/tags/roastduck#roastduckhttps://www.instagram.com/explore/tags/chinese#chinesehttps://www.instagram.com/explore/tags/cantonese#cantonese3.47%1811◯Saoji chicken 先月、自転車でオックスフォードまで行った旅がとても印象的だったのでその時のお話です。ロンドンからは片道100km少ししかないなので油断していたら、なかなか波瀾万丈な旅となりました。 ・ 休みの日、目覚めてから直感的になぜか「オックスフォードに行こう」と思い立ち、自転車で繰り出しますが、直前の大雨で地面の状態が最悪。足首までの水たまりばかりで、さらに行程の半分が未舗装路だったので道の所々がもはや小さな沼と化していてとても通行できる状態ではなく、時には自転車を担いで斜面を登り、迂回路を探したりといった有様でした。 またそんなことをしている内にすっかり日が暮れ、ライトをつけ忘れていた僕は文字通り手探りで進む羽目になりました。道中は相当な田舎で街灯はなく、さらには新月の日だったので、本当に星達だけが唯一頼りの明かりでした。幸いその夜は人生でも最も綺麗な星空で、辛うじて自分の手のひらだけはぼんやり視認できると言ったレベルでしたが、それでもあれほど星空が頼もしく印象的だった夜は初めてです。 ・ 木の幹から幹へ触れながら自分の位置を確認し、たまに見るGoogleマップで進路をとっていました(この時すでに充電は10%!)が、途中から道を大きくはずれてしまい、峠の牧場のようなところ(今思い返すとあれは本当に公道だったのか..)を暗闇の中延々歩いた時は、本当に自分が前に進んでいるのか、そもそも夢ではないのかというおかしな感覚に陥っていました。 ・ 遂にオックスフォードに辿り着いた時にはすでに午前2時を回り、12時間の壮絶な旅となりましたが、道中の景色や星空、たまたま意気投合してできた友人たちとの思い出含め、人生でも指折りで印象に残る旅となりました。翌日、泥々の格好で見学したオックスフォード大学もよかったです。 ・ 写真は全然関係ない最近作ったSaoji chicken というインド中央部の料理です。 ・ ・ I’ve been to more than ten states in India before, but actually not to Madhiya pradesh yet. These days, I’m interested in Madhiya Pradesh’s food as well as Gujarat’s one, and especially in Saoji chicken. That rich and balanced but complex aroma which derives from not only multiple spices but burnt dried coconut is really intriguing and once I bite one, I cannot stop it. This one Imade today is actually not bad as I see it. Out of all them, the highlight is definitely Oaxaca. The scale of the city, exiting historical atmosphere, proximity to green and authentic but modern-twist food reminded me of my second hometown, Kyoto. Pigeon/phesant bouillon/celeriac ・ ・ ・ #pigeon #鳩肉 #モダンインド料理 #インド料理2024/12/09に公開- 指定なしhttps://www.instagram.com/explore/tags/pigeon#pigeonhttps://www.instagram.com/explore/tags/鳩肉#鳩肉https://www.instagram.com/explore/tags/モダンインド料理#モダンインド料理https://www.instagram.com/explore/tags/インド料理#インド料理4.21%21110〇Duck breast / Celeriac フランス人のルームメイトとの合作です。彼は料理人ではないのですが、とても料理好きでいつも一緒に食の話ばかりするので、かねてからいつか一緒に料理しようと話しており、念願の料理会でした。 ・ メインの鴨はシンプルにロースト。パンで焼き目をつけてからオーブンで数分おきに休ませながら火を入れています。 ガルニのセロリアックは塩を塗ってオーブンで2時間焼いた後に切り出し、鴨の油で焼き目をつけ、レモンの果皮のコンフィチュールで作ったジェル、マイクロハーブのサラダをあしらいました。 （セロリアックは日本ではマイナーで、僕もイギリスに来るまであまり馴染みがなかったんですが、これめちゃくちゃ美味しいですね。今や個人的好きな根菜トップ3に入る勢いです。） ソースは仔牛と野菜をベースに、雉と雷鳥のスープを使って詰め、ドライアプリコットとオレンジ果汁で味を整えました。 鴨の下には焦がしたネギを叩いてラムのジュと少量の味噌で伸ばしたものを刻んだセロリアックと和えて敷き、香りのアクセントにしています。 ・ いやあ、正直かなり美味しかったです。笑 フレンチは初心者ということもあり、実際のフランス人の発想やソースの着地点の捉え方は非常に勉強になりました。インド料理や日本料理もそうですが、やはり現地の人がその国の料理を作ると、説得力というかある種の凄味がでるなと感じます。 ・ ・ ・ Together with my roommate. ・ Some Japanese who live overseas often complain about quality of ingredients. But, if you ask me, that’s simply because they stick to ingredient which is common in Japan and never try good local ingredients. Indeed, seafood is maybe much much better in Japan other than mussel and lobster, but when it comes to ducks, lamb, game meat, some fruit and root crop, I actually prefer UK’s one. As a side of Grilled meat, it’s okay, good. But honestly, although it’s not in an authentic way and maybe the locals feel like mental to hear that, I prefer having it with Stilton and honey put in its caldera. In Mumbai, I loved fish masala for staff in which fish head and remained body were used, which contained umami a lot, nevertheless not used for guests. Today, I bought a baby yellowtail called “inada” in Japan—we sometimes call even the same fish species differently depending on the difference of the size or the stage of their growth, speaking of which, we call adult yellowtails “buri”. This fine and delicate noodle—Somen—is an indispensable guy at Japanese kitchen in Summer. We mostly have it soaked in Mentsuyu made from bonito and kelp stock, soy sauce,milin and a little bit of sugar, but actually it goes well with spicy and tangy sauce, I think. Actually, the combination of rice and curd is weird for common Japanese—a kind of strong obsession that it must be soy sauce or miso with white steamed rice has been embedded with our Japanese brain for generations—.
