To be honest, I had never tried it in Tokyo. I did eat at their franchise in Singapore and was disappointed, so I came here feeling a bit worried.😅 Legendary Chef Yamamoto was in the restaurant. First, I tried the signature Shio Ramen. The soup was a delicious, clear seafood broth with a very deep flavor. Today, I found a new branch open at Central Pinklao. This is my second time visiting the chain since my first visit to the Future Park branch. I was so impressed by how delicious it was that I extended my planned two-night trip to four nights and ended up eating six bowls of ramen.🥰 When I heard that Chef Por was doing a pop-up with Chef Foam at Shun Ramen, I made sure to come for the very first round on the opening day.💨 The ramen featured a five pitan-soup blend (including 🐓Tori 🦆Kamo, 🐟Suzuki, 🦐Ebi&🦀Kani, 🦪Oyster 🐚Clam, 🐷Tonkotsu) paired with custom-made, thick, wavy noodles. From the very first sip, the soup was incredibly delicious. The harmony of the cherry-chip smoked chashu and ajitama, the shredded konbu (not takana!), the special spicy paste made with Toubanjan(豆板醤), and the thin noodles was exquisite. Considering the detail put into the toppings, I think this is even better than other Tonkotsu Ramen specialty shops in Thailand. 🥰 Plus, at the end of the photos & movies, you’ll find a special video with Jo-san from Shindo Ramen and Jade-san, the Eat Ramen Festa organizer. I had previously requested a Chintan Shoyu Ramen from Chef Por, and what he made for me was this Tori Kamo Tonkotsu Gyokai Chintan Ramen.  The broth uses a combination of chicken, duck, and pork bone, along with seafood elements like Maldive tuna & bonito flakes, Thai dried sardine (niboshi), Raw Bonito(Katsuo), Oysters, and also Kombu (kelp) and Shiitake mushrooms. For the shoyu, Yuasa Shoyu(湯浅醤油) is used.   With so many ingredients, I imagined it would be incredibly difficult to balance the flavors and avoid any off-notes. However, upon tasting the soup, it was surprisingly clear yet incredibly deep in flavor, and it paired wonderfully with their homemade noodles. So, on the very evening I had their Triple Garlic Tonkotsu Ramen (post No. 176) for lunch, I went back to try their tsukemen.😅 To be honest, the Whole wheat noodle was a little prone to breaking. However, it was a fragrant and delicious noodle; it was good even just with the accompanying pink Himalayan salt, and it was very good when paired with the rich, creamy seafood-pork tonkotsu dipping broth. I’ve now had four bowls of ramen at Tamashii Ramen, and this tsukemen is my favorite. So, I immediately went back to eat it!😍  It was a punchy and delicious bowl featuring a very creamy and mellow tonkotsu broth, enhanced with three types of garlic – garlic oil, crispy garlic, and black mayu – plus a salty tare. I had heard from Chef Por that he trained in Japan with the popular Gonokami Seimenjo & Itsuki group[五ノ神製麺所,いつ樹], and he's definitely added his own unique touch to this bowl. The ultra-rich broth, a blend of Tonkotsu, Gyokai Dashi, and shrimp, was loaded with delicious, torched chashu pork chunks. Three types of green onions and red onions added a nice kick.
